Hooked on Ayu Sweetfish at Nadaman
This June, Nadaman presents the summer special – “ayu” sweetfish from Japan. Diners can taste its distinctive sweet flavour and cucumber aromas through a selection of popular dishes designed by Chef Kojima.
Menu highlights include Grilled Wild Japanese Ayu Sweetfish; Deep-Fried Fresh Japanese Ayu Sweetfish; Grilled Sun-Dried Japanese Ayu Sweetfish; Japanese Fresh Ayu Sweetfish Sushi; Steamed Rice with Grilled Japanese Ayu Sweetfish and more. Supply is limited.
Addicted to Virgin Crab at Shang Palace
This midsummer, Executive Chinese Chef Mok Kit Keung indulges guests with an array of succulent creations made with seasonal virgin mud crab at the Michelin two-starred Shang Palace.
Available throughout June, the special à la carte menu includes Steamed Virgin Crab Dumpling with Matsutake Mushroom served in a Paper Pot; Baked Virgin Crab with Egg, Minced Pork and Salted Egg Yolk; Wok-Fried Virgin Crab with Ginger and Spring Onion; Baked Virgin Crab with Sea Salt and Deep-Fried Virgin Crab Shell Filling with Shredded Fish Maw and Black Truffle.
The “Land of Smiles” Highlights at Café Kool
Our native Thai chef at Café Kool, Chef Jintana, brings diners a hearty buffet of hot, sweet, sour and spicy Thai creations from 8 to 21 June 2015.
Offering over 18 Thai delicacies daily, the restaurant will delights guests with Green Papaya Salad (Som Tum); Spicy and Sour Lemongrass Soup (Tom Yam); Deep-Fried Sea Bass in Sweet and Sour Sauce (Pla Preaw Wan); Braised Beef Brisket in Thick Red Curry Sauce (Massaman Neua); Steamed Rice Dumpling filled with Sweet Peanuts and Pork (Khao Kreab Pak Mor); and Mango Sticky Rice (Khao Niew Mamuang), just to name a few.

Alessandro Angelini at Angelini
Angelini’s new head chef, Alessandro Angelini, pampers diners with his creatively designed three- to five-course dinner menus featuring the best-quality seafood and the finest seasonal ingredients this summer, available from HK$780 per person.
The fine-dining journey begins with a cold starter of Raw Sicilian Red Prawns, Avocado, Green Apple and Yogurt or Beef Tartare, Pear, Blue Berries, Gorgonzola Cream, Arugula and Lemon. Guests can also look forward to a hot appetiser of Warm Potato Foam, Chive Oil, Salmon Roe and Bottarga or Pan-Fried Foie Gras, Orange Sorbet and Rhubarb Compote.
The dinner continues with a pasta course of Home-Made Cocoa Tagliolini, Baby Squids, Shrimps, Clams and Chilli served in a Paper Box or Home-Made Buffalo Ricotta and Burrata Ravioli, Sweetbread, Veal Sauce, Capers and 24-Month Aged Parmesan Cheese. For the main course, a choice of Dover Sole in “Savor” Style (Caramelised Onions, Raisins and Pine Nuts) and Gratinated Asparagus or Pork Tenderloin, Baby Fennel, Wild Berries and Italian Couscous is available.
The meal will be concluded with an Italian Cheese Selection or Yogurt Foam, Coffee Jelly and Cinnamon Crumble.
Flamed Cheese Cake at Déli Kool
Between 1 and 30 June 2015, Executive Pastry Chef Thomas Broger will welcome the hot summer with a rich and creamy 2-pound Flamed Cheese Cake priced at HK$300. Hazelnut Vanilla Cookies are also on offer for HK$85 per 100 grams.
