Brand-New Chinese New Year Puddings and Goodies

This year, Executive Chinese Chef Mok Kit Keung from the Michelin two-starred Shang Palace introduces three creations – Kyoto Uji Matcha and Red Bean Pudding, Hawaiian Purple Sweet Potato Pudding, and Korean Brown Sugar and Melon Seed Pudding – in addition to his list of traditional Chinese New Year puddings.  Classic Cantonese treat (Crispy Taro Balls with Sesame) and festive specialty (Five Treasures Tray) are also available in celebration of this Spring Festival.

Chef Mok has joined hands with Chef Kojima, Nadaman’s head chef, to lend a Japanese twist to Chinese pudding by creating this year’s Kyoto Uji Matcha and Red Bean Pudding.  Chef Kojima has picked high-quality powdered green tea from Yamamasa Koyamaen, an award-winning tea farm in Uji, Japan, which has produced traditional green tea for over 100 years.

In addition, the chef opts for the finest Hokkaido red beans from the renowned Japanese sweets shop in Shinjuku, Tokyo – Hanazano Manju.  Combing traditional Chinese pudding-making skills with the ever-popular food ingredients, Chef Mok adds potato powder to make this brand-new creation sparkle in presentation and to give it a soft and chewy texture.
