‘La Rambla By Catalunya’ To Open At IFC Mall In November

Launched in 2012, Catalunya established itself as Hong Kong’s leading Mediterranean dining destination serving innovative Spanish cuisine. In November, they will be opening a new concept, ‘La Rambla by Catalunya’ at ifc mall. Spanning over 5,000 sq. ft., La Rambla will extend the legacy of its predecessor and offer contemporary interpretations of Spanish flavours in the heart of Hong Kong.

“After five years in Wan Chai, we’re excited to expand Catalunya into a more elaborate concept,” explains Mauricio Rodriguez, La Rambla’s new General Manager, a veteran of el Bulli and part of the original Catalunya opening team. “We want to delve into aspects of Mediterranean cuisine that intrigue and inspire us. Catalan cuisine has been at the heart of the Spanish gastronomic revolution in recent years, with creative chefs like Ferran and Albert Adrià and the Roca brothers introducing cutting-edge cooking techniques to traditional dishes. We want to embrace this avant-garde spirit at La Rambla by presenting traditional Catalan cuisine in inventive ways.”

In the Kitchen
The kitchen, helmed by Spanish chef Ferran Tadeo, formerly of Minibar by José Andrés and also el Bulli, will offer an ingredient-driven, Catalan-inspired menu that reflects his creativity and mastery of modern cooking techniques.

Born in Barcelona, Chef Ferran was mentored by such Michelin-starred maestros as Ferran and Albert Adrià (el Bulli, Tickets) and Chef Sergi Arola (Arola). After almost a decade under their tutelage, he opened El Nacional de Barcelona in 2014, which Condé Nast Traveler described as “the place to eat and drink right now in Barcelona.”

Known for delivering brilliant flavours based on a strong understanding of Catalan cuisine, Ferran was recruited by award-winning chef José Andrés to work at his acclaimed Minibar restaurant in Washington D.C. A one of-a-kind gastronomic experience, it is consistently included in lists of Washington’s best restaurants. The Washington Post’s review began with the heading, “If you want to taste the future, Minibar is the place.”

A protégé of two of the most renowned Spanish Chefs in the world (Ferran Adrià and José Andrés), Ferran Tadeo moved to Hong Kong in 2017 where he was appointed Executive Chef of the award-winning Catalunya.

On the Plate
With an unwavering eye on quality, the La Rambla team is committed to sourcing the freshest ingredients possible. Seasonal seafood not only from Spain, but other parts of Europe and Japan are flown in twice a week offering guests the opportunity to sample produce in its best possible condition, prepared with integrity. These include red prawns from Palamós (just north of Barcelona) and ‘pepino de mar’, a Spanish version of local Hong Kong delicacy, sea cucumbers.

Chef Carles Tejedor, owner of Lomo Alto, Barcelona’s top steakhouse Carles Tejedor, will be directly sending a 90-day and 120-day aged Galician beef to La Rambla, a first for Asia.

The attention to detail also extends to the bar programme. La Rambla will serve such classics as dry martinis and gin tonics, two cocktails synonymous with Barcelona’s drink culture. With a focus on quality rather than theatrics, the drinks will be based on iconic recipes. A gin trolley will roam the dining room and bar offering over 30 varieties of gins and more than 10 types of tonics. La Rambla will also recreate el Bulli’s signature white “Sangria in Suspension”, a refreshing molecular cocktail with suspended fruit and mint leaves. For oenophiles, wine director Marie-Paule Herman, another el Bulli veteran and Hong Kong’s Amber, will offer a curated selection of fine wines housed in Sub-Zero wine fridges.

Front of house
Guests can expect exceptional service that combines the nuances of Asian hospitality with an engaging, relaxed sense of fun that’s so intrinsic to Spanish culture. With an expert front of house team from Catalunya, dressed in custom-tailored attire by Hong Kong-based fashion designer Jourden, regulars will feel at ease with a dining experience that is both warm and understated. In planning pop-up concepts and guest chef appearances, La Rambla will tap into its wide network of Spanish maestros, including respected culinary ambassadors Ferran and Albert Adrià.

Interior Motives
Established as a tastemaker in the fashion, art and design scenes, co-founder Kevin Poon has recruited top designers in the hospitality field to create an immersive dining experience. La Rambla’s interior was designed in collaboration with former AB Concept veteran Stanley Kwok who heads the Hong Kong-based design studio, Stanley KC. Drawing inspiration from traditional Spanish motifs to create a vibrant, modern restaurant, every design element was carefully considered. From the carefully curated Alessi cutlery to the Bang & Olufsen sound system, La Rambla promises a highly tactile dining experience. The meticulous approach was also applied to the restaurant’s lighting. Eugenia Cheng, founder of Hong Kong’s Light Origin Studio and formerly of Tino Kwan Lighting Consultants, brings her years of international experience to La Rambla to create an inviting, warm ambience.

La Rambla guests will transition from the bustling ifc mall to the restaurant entrance where they will be greeted by a custom artwork by Spanish contemporary artist Javiar Calleja. A passageway connecting diners to the main dining room features a display of live seafood. A separate bar and intimate Chef’s Table encourage casual dining while two private rooms will host small parties and VIP dinners. Taking centre stage in the main dining room is a live tree, replicating the structure of a Spanish courtyard and showcased in a custom-designed light box. While the emphasis is on plush textures and brass finishes, raw elements, such as dark woods and rusted metal, imbue the space with an earthy charm.

Take it Outside
While the indoor space can welcome up to 100 diners, the outdoor terrace has been redesigned with a custom-made wooden deck and separate bar. Destined to become the go-to destination to enjoy postcard-worthy views of Hong Kong’s iconic harbour, the outdoor terrace will seat up to 100 guests and feature designer pieces from Kettal, a Barcelona-based manufacturer of outdoor furniture.
