Traditional French bistro, Le Bistro Winebeast unveils their new menu featuring Chef Johan Ducroquet’s hearty and filling dishes that captures the essence of Autumnal dining that puts an edge to French cuisine just right for this time of year.
Known for traditional French cooking with a sophisticated twist, Chef Johan makes the most of the freshest ingredients available at this season to create wholesome dishes. Le Bistro Winebeast’s fall menu is an ode to timeless classics with a little added je ne sais quoi from the starters right down to the quaint desserts.
Highlights from the Frapas include the classic Beef Tartare, the Grilled Sardine which is a refreshing mix of citrus, fruits and coriander, as well as Vin Jaune-Flavoured Chicken Cream to keep warm. Loyal to his traditional roots yet set apart by his keen eye for Asian influences, Chef Johan’s offers selected signature dishes including the Poached Foie Gras all the way from Southwest of France.
Throughout September and October, the 4-course tasting menu starts off with Crab, Tomato and Courgette mixed with olive oil, apple vinegar, horseradish cream and blue poppy seeds, carefully paired with a delightful Zind-Humbrecht Riesling Calcaire 2013. Savour the Pan-Fried Grouper Fillet cooked in halzelnut butter, confit lemon, caper, fresh herbs risotto and clam jus with a perfect glass of Jean Macle’s Tradition, followed by the Roasted Guinea Fowl – a fall comforter complimented by the hearty Garnacha Vinas Viejas. Those with a sweet tooth can indulge in the comfort of Roasted Peach put together with star anise, vanilla, rum, pistachio ice cream, meringue and red fruit coulis, and the sweet Pierre Frick Gewurztraminer V.T.. The menu costs merely HKD558 per person including selected wines paired with each dish.
