South-western Sydney’s most upmarket hotel, the 4½-star hotel, Rydges Campbelltown, has unveiled a sophisticated new dining and bar concept called OTIS embracing a premium grill restaurant, stylish bar and outdoor terrace and a hip craft brewery offering zealous new brews already downing awards.
Tailored for locals, visitors and corporate guests alike, OTIS Bar and Grill is the “edgy”, on-trend and head-turning culmination of a complete $700,000 transformation of the ground-floor entertainment area of the deluxe hotel, which previously housed Infusion restaurant and brewery.
Emerging from the refurbishment, which included hip new furniture, lights, wallpaper and curtains, are the new-look OTIS Bar and Terrace, which boasts a striking, 360-bottle wine wall, an eye-catching art piece hovering over the bar and an inviting outdoor terrace for relaxing, alfresco drinks with friends, OTIS Grill – a 70-guest, fine-dining restaurant specialising in premium wagyu beef and OTIS Brewing Company where head brewer, Allan Barclay, has six unique beers on tap, with another four plus two ciders fermenting on the drawing board.

Rydges General Manager Brett Barlow said OTIS would prove popular with the hotel’s many conference delegates, users of the adjacent Campbelltown Catholic Club and CUBE Convention and Entertainment Centre and Macarthur locals who like to live it up and let their hair down in style without travelling into the city.
“We invite Sydneysiders and especially locals, including Picton, Camden and Liverpool, to come in and savour the sophisticated sanctuary we have crafted for people to relax in stylish ambience, feast on gourmet food and enjoy our chic cocktails, earthy brews and also live acoustic music on Friday & Sat nights,” Mr Barlow said. “We particularly want locals to know that you don’t need to stay at Rydges to enjoy the elegance and class of our new-look OTIS bar and dining areas which are designed for anyone to meet and mingle with friends,’ he added.

The signature dish at OTIS Grill, overseen by executive chef Mathew Ovington, is premium Schottlanders wagyu beef from the NSW South Coast while the suite of new craft beers brewed on site includes The Stag – which recently scored a bronze medal at the 2015 Sydney Royal Beer and Cider Show, the flagship spice and citrus noted beer, The Ghost, inspired by Macarthur’s famous ghost, Fred Fisher, and also Pug Pale Ale, Boar Pilsener and Fox Amber Ale – all on tap. Brewery tours will also be offered.
The Rydges Campbelltown offers free wi-fi and parking, 116 luxury rooms, access to the huge Aquafit Fitness and Leisure Centre next door and meeting space for 80 people with conference facilities at the adjacent CUBE Convention and Entertainment Centre for up to 80 guests. Campbelltown Golf Club is also nearby.
