Marvelous Marbling: Signature Matsuzaka + Foie Gras + Unagi Maki

Stars with strong personalities can sometimes clash and it’s often best to keep them apart. Not so, however, with three of the world’s most stellar foods – Matsuzaka beef, foie gras and unagi eel –in the inspired hands of Utage Japanese restaurant’s passionate chefs.

Chef SamartSome of the best beef, duck liver and freshwater eel on the planet, when added with other select ingredients also not wanting in charisma – japonica rice, avocado and wasabi – and sculpted together, form the meatiest makis  imaginable. What’s more, these exceptionally mouth watering morsels are especially noteworthy for the exquisite harmony of their finely-balanced component flavours and textures.

With the stars’ combined wattage working wonders on the palate, the dish quickly achieved the status of a favourite among Utage’s regular customers, in the process automatically appointing itself at the top of the table among the award-winning Japanese restaurant’s select few signature items.

Starting at the outside, a ring of soft garlic and beef jelly enfolds a sublimely tender flame-seared sliver of Matsuzaka beef with an optimum marbling score of 9, followed by a fine binding of Japanese kelp roll. Then comes the filling, comprising a tightly packed mosaic of fresh Australian avocado, sweet unagi eel, French foie gras and tender pearls of sticky rice, all lightly spiced with the merest hint of freshly minced wasabi.

Matsuzaka Beef Maki with Garlic JellySized for one cheek-busting bite, each serving of the dish arranges six makis around  a mound of recently harvested red and green seaweed, shredded turnip and onion rings. Velvety green stalks studded with delicate pink Japanese pepper flowers add another aesthetic dimension to the plating while the usual condiment of wasabi and dipping soy sauce is poised to the side.

The signature Matsuzaka Beef Maki with Garlic Jelly is not the only compelling reason to dine amidst the subtly-detailed contemporary Japanese elegance of Utage located on Level 03 of Plaza Athénée Bangkok, a Royal Méridien – not by a mile. But they definitely do take some beating in the eating.

Open daily for lunch from 11:30 – 14:30 and dinner 18:00 – 22.30.
