The Pirata Group will unveil a sneak peak of their newest restaurant MEATS launching this October, with a pop-up at The Optimist. Featuring simply executed and succulent meat dishes, the exclusive pop-up menu will be sharing-style priced at HKD 450 per person. The second floor of The Optimist will be reserved exclusively for the pop-up from 10 to 14 September and 17 to 21 September, from 6pm to 10:30pm.Limited places for the pop-up dinner are available and can be booked at www.piratameats.hk or Feedme Guru.

Opening in SOHO, the first “meat bar” of its kind in Hong Kong will dish up traditional and unconventional cuts of meat prepared to bring out the best in flavour, using mastered techniques such as house-smoking, rotisserie and charcoal grilling. Dishes are served simply with raw sea salt or marinated with exciting ingredients ranging from jalapeños to Szechuan peppercorns and coffee. From preparation to precise carving, the team knows how meat should be treated from start to finish.

“Our new concept MEATS brings things back to basics. Going out for some good meat doesn’t have to be an expensive, white-table cloth affair. MEATS is where you can gather with friends, roll up your sleeves and dig into a juicy, satisfying feast,” say co-founders of Pirata Group, Christian Talpo and Manuel Palacio.

At The Optimist’s exclusive pop-up, MEATS Head Chef Paddy McDermott will be butchering, cooking and carving some of the restaurant’s highlight dishes, which will be served for sharing on the table.

Smaller dishes to start include Chicken Croquettes with roast garlic and mayonnaise, Sriracha Steamed Bun with crispy smoked bacon and Tonkatsu sauce encased in a fluffy bao, Chicken Drumsticks with kimchi hot sauce and sweet black sesame honey, and melt-in-the-mouth beef Bone Marrow with anchovy butter and tarragon breadcrumbs.

Larger dishes to savour are slowly marinated for deep flavour. With juicy Lamb Chops rubbed in coffee and served with homemade South Kentucky BBQ sauce and tender Skirt Steak which is carefully marinated to slice like butter and topped with a spicy jalapeño kick. The Iberian Presa, considered one of the best cuts of Iberian Pork for its softness and distinct nutty flavour, is served in a black garlic and miso butter with a side of crispy pork belly crackling slow-roasted with Szechuan peppercorns.

Finish the meat feast with a refreshing Coconut Lime Pie made with lime zest, coconut meringue and coconut ice-cream.

Opening later this year, MEAT is a no service-charge, no reservation meat bar where guests can roll up their sleeves and dig into a tender, juicy and satisfying feast with friends.
