Renowned chef Jean-Georges Vongerichten has been in Hong Kong refining the menu at his exciting new Italian restaurant Mercato. Several days have gone into polishing the selection of dishes and ensuring each one passes the chef’s strict standards.
Chef Jean-Georges has been giving his menu a rigorous work out, making sure each dish lives up to his high expectations before being given the final seal of approval. Such attention to detail is par for the course with the French chef, who is noted for taking a very hands-on approach to running his restaurants, several of which have earned Michelin stars.
The vibrant ambiance at the front of house is matched by the high quality cooking that has earned Jean-Georges his stellar reputation. The veteran chef’s farm-chic venue has a menu designed around dishes meant to be shared with family and friends.
Some of the highlights that guests will be able to enjoy include a welcome of Olive oil and grilled House made bread, light starters including Endive and Sugar Snap Pea Salad with Parmesan Dressing and Herbs and Char Grilled Octopus with Caper Garlic Dressing, Warm Potato Salad, Green Olives and Fennel. Heartier mains include a Crispy Beef Short Rib, Polenta Fries with Smoked Chili Chianti Glaze and Rigatoni and Meatballs in Smoked Chili-Tomato Ragu.

Straight from the wood-fired oven and with a base made from the finest Italian semolina flour comes his special “light-as-air” pizza such as Wild Mushroom Pizza with Three Cheeses and Farm Egg. Whatever guests chose, they can expect many ingredients to be seasonal and local. They can also expect plates cooked in Jean-Georges signature style. That means a lightness of touch and no heavy cream-based sauces. Jean-Georges also brings some of the flavours of Asia to his Italian dishes – he’s not just worked in Hong Kong but in Bangkok, and Singapore as well, picking up a love of local flavours along the way.
Guests can expect not just some chilli heat but some of the other spices and flavours of Asia as they enjoy the Vongerichten take on Italian classics.

The Mercato Bar features a completely original selection of cocktails made with the finest Italian spirits, freshly muddled fruits and aromatics. A diverse and fascinating array of Italian, old and new world wines is also available, making the Mercato Bar the perfect spot to enjoy a pre-dinner cocktail or late night drink.
