MICHELIN guide Hong Kong Macau Dining Series Invites German-Swiss Chef Rolf Fliegauf for This Year’s Finale in September

Celebrated German-Swiss chef Rolf Fliegauf, considered one of Europe’s top culinary talents, will be making his debut in Hong Kong and Macau for three days this September as the final guest chef of this year’s MICHELIN guide Hong Kong Macau Dining Series’ International Chef Showcase. With an impressive six Michelin stars under his apron, Chef Fliegauf will be presenting two exquisite tasting menus created exclusively for the Series at WHISK, The Mira Hong Kong on 20 September and Yi Pavilion, Altira Macau on 22 and 23 September. Prices start from USD 100 net (MOP 800 net) inclusive of wine pairings with tickets available here: (early bird offers from now until 27 Augustfor Macau only).

For an extra special evening, the Michelin-recommended luxury hotel Altira Macau will give guests an unrivalled, 180-degree panoramic view of the Macao International Fireworks Display Contest over the city’s spectacular skyline from its signature private dining room Yi Pavilion on 23 September. Seats will be limited, so advance booking is recommended.

German-born Chef Fliegauf won his first Michelin star at the age of 26, only six months after opening his first restaurant Ecco Ascona in Switzerland. His three restaurants, Ecco Ascona, Ecco St. Moritz and Ecco Zurich, each holds two Michelin stars, making him the most awarded chef in Switzerland. Inspired by the natural surroundings of the picturesque lakeside locale of Ascona, Chef Fliegauf is highly regarded for his produce-driven dishes with inventive uses of seasonal ingredients.

Chef Fliegauf’s four-course lunch and eight-course dinner menu, created especially for the Series, will showcase his take on modern European cuisine. His dishes are a true reflection of his masterful culinary skills, with a playful use of ingredients and culinary creations inspired by some of his favourite Asian flavours.

Highlight dishes which exemplify the individuality of Chef Fliegauf’s cooking include his Foie Gras Müsli, an experimental take on the traditional Swiss cereal with marinated, frozen foie gras and blackcurrants. His often surprising flavour combinations can be savoured in dishes such as the Organic Celeriac Gyoza with fragrant black truffle in onion broth, and the Braised Veal Cheek which is intensified by the sweetness of beetroot and earthy aroma of coffee.

The MICHELIN guide Hong Kong Macau Dining Series has invited some of the best chefs from Michelin-starred restaurants around the globe to cook for discerning diners in Hong Kong and Macau. Bringing together esteemed gourmet connoisseurs, the exclusive Dining Series is in collaboration with Official Title Partner Melco Resorts and Entertainment and wine experts Robert Parker Wine Advocate – who carefully curate the highly-rated wine pairings for each menu.

This year’s Dining Series has seen some of the world’s celebrated culinary luminaries and rising stars create unforgettable tasting menus exclusively for Hong Kong and Macau. From Italian locavore pioneer Norbert Niederkofler, legendary Cantonese chef Jian Jie Ming to masters of Japanese cuisine Yoshinori Ishii and Takagi Katsuo. The Series finale featuring Chef Fliegauf will be no exception for a spectacular dining experience not-to-miss.
