Michelin Guide Hong Kong Macau Dining Series Presents Chef Curtis Duffy of Chicago’s Three-Michelin-Starred Grace Restaurant at The Tasting Room of Macau from December 1-3
The third event of the International Chef Showcase, part of the Michelin Guide Hong Kong Macau 2017 Dining Series with the support of Official Title Partner Melco Crown Entertainment, will present for three nights only from December 1 to 3, Curtis Duffy
– one of America’s hottest and most daring chefs, a prodigy of Grant Achatz and chef-owner of the three-Michelin-starred Chicago restaurant Grace. Chef Duffy will make his Macau debut by showcasing his special creations in an exquisite six-course dinner menu at two-Michelin-starred The Tasting Room, City of Dreams.
Challenging the formidable taste buds and senses of foodies in Hong Kong and Macau, Chef Duffy will present unique creations that blend the best traditional and seasonal ingredients gently and sparingly accented with modern techniques of molecular gastronomy. Curtis Duffy takes an artisanal eye to developing his cuisine and is renowned for painstakingly finding the right flavour to enhance a dish. At Grace, two multi-course tasting menus – “Flora” and “Fauna” – featuring refined but playful dishes are offered. “Flora” offers dishes like broccoli with hazelnut, meyer lemon and tangerine lace; Trumpet Royale with oat, persimmon and sea cress; and heart of palm with ginger, mint and coriander; while “Fauna” offers such varied dishes as rabbit with chanterelle, smoked paprika and elephant garlic; Miyazaki beef with white truffle, pistachio and scallions; and Alaskan king crab with sudachi, cucumber and lemon mint.
Hosted at The Tasting Room, a two-Michelin-starred contemporary French restaurant at City of Dreams, the third event of the International Chef Showcase will feature an extraordinary dinner menu by Curtis Duffy that will reflect his daring approach to creating elegant and graceful cuisine.
