Michelin-Star Hors D’oeuvres For Whisky Connoisseurs At SAFE Bubbles & Malt

unnamed (2)Gourmet hors d’oeuvres styled by two Michelin star Chef Philippe Leveille are new on the menu to compliment enjoying a ‘wee dram’ at Hong Kong’s haven for whisky lovers SAFE Bubbles & Malt in Central. The gastronomic twinning results from a new business association between SAFE Bubbles & Malt and the celebrated chef’s Hong Kong restaurant L’altro at The L Place, Central – sister restaurant to his famed Miramonti L’altro in Italy.

 Chef Philippe Leveille has created four appetisers with suggested pairings to distinguished rare single malts: Apple Wood-smoked Mackerel with Cauliflower (HK$88) is recommended with SMWS Bowmore 3.200 or Adberg 10 Y.O.; Slow-braised Wagyu Beef Cheek with Carrots and Asparagus(HK$148) compliments SMWS Glen Moray 35.113 or Springbank 17 Y.O.; Foie Gras and Smoked Eel Terrine (HK$128) is suggested with SMWS Longmorn 7.89 or Hankushu 18 Y.O.; and Marinated Wild Salmon and Crispy Cucumber Noodles (HK$118) matches Islay single malts Bruichladdich or Bunnahabhain 18 Y.O..

 Due to popular demand, SAFE Bubbles & Malt has also extended its season of summer workshops introducing legendary Scottish and Japanese whiskies.

 Forthcoming guided tastings are held in small groups every Friday evening from 6 p.m., introducing connoisseurs to some of the world’s rarest and most revered ‘wee drams’.  Details of the workshops are :

‘SPIRIT SHOP SELECTION’ Unveils recent 2014 bottlings of 20-40 year old limited editions from across the Scottish highlands and islands, featuring Ben Nevis 1970, Bunnahabain 1990 and Macallan 1993.

 25 September 2015 (HK$480 per person)

‘ELEMENTS OF ISLAY’ – Introduces casks selected by the revered independent bottler from four of the island’s celebrated distillers: Bruichladdich, Caol Ila, Bunnahabhain and Bowmore. Located on the southernmost of the Inner Hebridean Islands off the west of Scotland, Islay malts are known for their strong peaty character with distinctive notes of iodine, seaweed and salt.

Founded by German whisky enthusiasts, Carsten Ehrlich and Meike Schneider, the renowned independent bottler ‘THE WHISKY AGENCY’ – Presents Bowmore Distilled 1998 Bottled 2013 15years Refill Butt cask; Bunnahabhain Distilled 1980 Bottled on 2013B 33years Ex-Sherry cask; Caol Ila Distilled 1979 Bottled 2012 33years Refill Hogshead; and Port Ellen Distilled 1983 Bottled 2008.

‘BOWMORE’ – Delves into the celebrated distillery tasting Bowmore Gold Label 12 years; Bowmore Distilled 1972 21 years; Bowmore Peerless Distilled 1968 Bottled 2002 34 years; and Bowmore Hand Filled 53.2%.

‘MACALLAN’ – Savours 18 YO icons from four consecutive years in the 1980s in a vertical tasting allowing connoisseurs to appreciate the fine differences and nuances from these fabled years: Macallan 1981 18 years; Macallan 1982 18 years; Macallan 1983 18 years; and Macallan 1984 18 years.

‘THE SCOTCH MALT WHISKY SOCIETY’ – Shares rare casks with SMWS 3.221 Bowmore 19 years Sherry cask; SMWS 5.37 Auchentoshan 13 years Bourbon cask; SMWS 76.112 Mortlach 27 years Bourbon cask; and SMWS 123.8 Glengoyne 12 years Port Pipe. The workshop will be led by SAFE Bubbles & Malt consultant Mr Eric Huang, one of Asia’s Hong Kong’s foremost whisky experts and founder of the Taiwan Single Malt Whisky Association, as well as Taiwanese Ambassador for both Glenfiddich and William Grant & Sons.
