Michito Kaneko, 2015 World Class Bartender Of The Year, To Take Over Zuma Hong Kong’s Bar & Lounge 18-19 January 2017
World Class Global Bartender of the Year 2015 from Japan will visit Hong Kong for the first time in January 2017, in a visit that coincides with the launch of the World Class Bartender of the Year competition 2017 in Hong Kong.
Internationally renowned for his cocktail innovations Michito Kaneko is also celebrated as a bartending personality whose engaging spark and whimsical humour is the personification of Japanese hospitality. Taking over ZUMA Hong Kong’s Bar and Lounge on Wednesday 18 and Thursday 19 January 2017 Michito will host two unique Guest Bartender sessions, 7 – 11pm, bringing his celebrated and impeccably calibrated cocktails to Hong Kong audiences for the first time. Growing up in a family of ceramic artists high up in the mountain city of Nara, nature, aesthetics and craftsmanship have been leading factors in Michito’s inspiration, and he has always valued the creativity involved in cocktail making as the most rewarding part of his work. To celebrate his debut in Hong Kong Michito brings his 13 years of experience to the fore with seven exquisite and exciting cocktails. Available at the bar for HKD110 each, three of the cocktails will also be served as part of specially crafted three course Cocktail Pairing Menu available from the 18 to 31 January 2017. HKD650.
The Pairing menu will feature three drinks using spirits from the Diageo World Class collection: Ron Zacapa, Don Julio Reposado and Tanqueray No. TEN gin. The Vin Zacapa is made with cranberry, raspberry vinegar and Angostura bitters and is a rich and full bodied expression of Ron Zacapa 23. It is bright on the pallet with notes of red fruits and chocolate, before a warming finish reminiscent of a northern Rhone red wine. It will be paired with a signature Zuma dish; seared wagyu with daikon, cucumber, black truffle and ponzu.
The name Michito translates literally as ‘man on the road’ and his continuous desire for improvement and perfection can be seen in the second of Michito’s creations that will be served as part of his pairing menu; the Japanese Sensory. Exploring a balance between sweet and sour the pale yellow cocktail is made with Atsukan syrup (Sake & sugar) and fresh lemon juice that is strained into a brandy glass dusted with sesame salt and Houjicha powder (Japanese roasted tea). This subtle expression of Japanese flavours amplifies the herbaceous characteristic of the Tanqueray No. TEN gin. Complementing the freshness of this drink it will be paired with seared salmon served with lime shiso sauce. The third cocktail on the pairing menu will be the El Julio 75, a delightful take on Don Julio Reposado served with Champagne, grapefruit peel, agave syrup and sea water. Reflecting the complexities of this cocktail it will be served with crispy fried squid, green chili and lime.
Over 13 years ago Michito was inspired to quit his job as a construction worker to become a bartender after tasting cocktails in the most famous bar in his home region of Nara, Japan. Three years ago he opened his own, The Lamp Bar, from where he will also be bringing four of his specialty cocktails; Union, Amber Time, From 23 and Triple Gold.
