Milton Park Chef has a feast for all, inspired by the Four Seasons

In a first for Milton Park Country House Hotel and Spa in Bowral, the prestigious, five-star property has launched a series of culinary music events to showcase the best cuisine from the Southern Highlands, New South Wales and Australia.

Milton Park’s hatted chef, Craig Knudsen, is conjuring a magical feast to tantalise and satisfy the most discerning of palates during the hotel’s new series of musical events which will take guests on journey through the seasons. The first event is the ‘Summer Soiree’ to be held at Milton Park on Sunday, February 18, 2018.

In residence at Milton Park for the past six months, Craig has weaved his magic on the menu. Shying away from ‘signature’ dishes, this chef prefers to romance the seasons, celebrating calendar-appropriate ingredients to masterfully create unique flavours.

“For me, it’s not about having a signature dish – I don’t want to be pigeon-holed” he said. “It’s more about being on a journey through the best ingredients and letting the produce do the talking.”

His menu will mirror the grandeur of outdoor operatic theatre, delivered by opera performers ‘The Devastating Diva’ and ‘3 TenOz’ in the surrounds of the Milton Park Country House Estate, with its resplendent gardens and mighty trees. Later in the year, the theme will change with three more events, allowing the journey of sensory discovery to continue.

“I want guests at Milton Park to not only savour the food, but also their surroundings, the service and the ambience here, which, together, provide that magical and memorable encounter people crave for,” Craig explained. “The 2018 program of musical feasts allows me to extend experiences beyond taste, to encompass all the senses.”

February’s Summer Soiree on February 18 includes canapes, champagne, dinner and performances. The Gold Package is available for $280 per person. The Platinum package includes the addition of an exclusive private supper with the opera performers after the event, as well as signed 3 TenOz CD, and is priced at $390 per person.

Guests can also stay at the luxurious Milton Park Country House Hotel and Spa, with a 20 per cent discount offered for a two-night stay on either Friday and Saturday or Saturday and Sunday. Two nights’ accommodation is available from $640 per room, including the saving. A 15 per cent discount is available for a one-night stay on Sunday night after the concert, with rates from $301.75 per room. Rates include a hot breakfast each day.
