Nadaman at Pudong Shangri-La, East Shanghai presents a new and exciting sake-pairing dinner, a sizzling multi-feast concept that combines the best of sake and kaiseki cuisine offerings, available from Thursday to Sunday from 6 p.m. to 10:00 p.m., starting 9 July 2015.
The new Sake-Pairing Dinner Menuconsists of seven exquisite courses and five different choices of sake. Guests are in for a satisfying experience for all the senses as they indulge in delicate kaiseki food and amazing pours of various sake options which perfectly go with each course.
Sake is a Japanese rice wine made by fermenting rice that has been polished to remove the bran. Unlike wine, in which alcohol is produced by fermenting sugar that is naturally present in grapes, sake is produced by a brewing process more like that of beer, in which starch is converted into sugars, before being converted to alcohol.
The Sake-Pairing Dinner Menu starts with Dried Mullet, Deep Fried Eggplant with “Ponzu” Sauce, Marinated Edamame with Mustard, Boiled River Prawn with Ginger and Boiled Vegetables. The appetizer is recommended to go with a cup of “Emishiki” Tokubetsu Jyunmai. After the appetite-stimulating dishes are four types of Sashimi which pair with “Kozaemon” Ginjyo.
Grilled Eel with Grilled “AYU” (Japanese seasonal fish) is served as the third course. A perfect cup of “Dewazakura” Honjyozo is paired with the grilled items. It is followed by a cold dish of Cold Tomato with Soybean Milk Sauce paired with “Tsukasabotan” Jyunmai.
The fifth course is Deep-Fried Soft Shell Crab with Salad to go with “Toko” Jyunmai karakuchi. Following the Deep Fried, the main course is offered which is Sea Bream and Boiled Rice with Tea. The savoury main dish finally brings guests’ taste buds to an ultimate enjoyment. To close the Japanese feast, Chef Saito presents Watermelon Jelly and Ice Cream with Wafers.
Nadaman’s Sake-Pairing Dinner Menu is priced at RMB688 per person plus another RMB250 for all the five cups of sake paired with the food. The rates are subject to a 15 per cent service charge.
