New ‘The Cliveden Bar & Dining’ to join Melbourne’s culinary scene

The landmark Pullman Melbourne on The Park is set to welcome a new all-day destination dining concept, The Cliveden Bar & Dining, scheduled to open mid-August. The restaurant and bar is currently undergoing a complete makeover, as part of a $6million transformation of the hotel’s ground floor interiors, whilst retaining the historical roots of the site by paying tribute to the ‘Cliveden Mansion’ – one of Australia’s grandest social houses.

The Cliveden Bar & Dining will offer an all-day evolving contemporary dining experience, that transitions as the day passes. On arrival, guests will be greeted with an oversized bar and double sided fireplace with animated mixologists shaking cocktails. The new space will be a playground of culinary delight, offering a relaxed yet welcoming atmosphere for hotel guests and Melbournians alike.

At the helm of The Cliveden Dining is Executive Chef John Ross, who will serve up a modern buffet interpretation, influenced by local artisan creators and the city’s rich and diverse European heritage. Plentiful and ever-changing, the offering will include fresh seafood, carvery, a charcuterie and antipasto selection, as well as a fresh pasta station. With European and Mediterranean influences, the menu will showcase the freshest regionally grown produce as well as small plates designed to share. Themed menus celebrating seasonal ingredients and international flavours will also feature throughout the year to add a touch of variety.

To complement the hotel’s food philosophy, The Cliveden Bar will showcase some of the region’s greatest wines, from the lesser known to the rising heroes, curated to highlight the diversity and complexity of Australian wines. Aperitif cocktails, ciders, local craft beers and a variety of European beer, bottled and on tap will feature amongst signature spirits and cocktails. The bar will serve up fresh oysters, artisan charcuterie, shared plates, pastries and high tea with a twist.

The name ‘Cliveden’ holds a deep connection with this landmark location, adjacent to the MCG in East Melbourne, which has long embraced its strong local history. The Cliveden Mansion was built in 1887 – the centre of Melbourne’s elite social scene, which was converted to luxury apartments and later a hotel, remaining as such for 42 years, holding special sentiment with the local community.

Erkin Aytekin, General Manager at Pullman Melbourne On The Park said, “With the site’s long history as a hub of social entertainment in Melbourne, we aim to bring back that same spirit to The Cliveden Bar & Dining. We have also maintained some features from the original mansion such as stained glass panelling and wood work that has been carefully restored in the new space.”

“With Melbourne diner’s insatiable appetite for eating out and trying new places, we identified a need to further develop our food and beverage proposition as more than just a functional department, in the redesign process.

“The Cliveden Bar & Dining will be a destination in its own right, a stand-alone entity presenting a bold statement on arrival to the main entrance of the hotel, set to impress our loyal guests and attract even greater volumes of new patrons, and visitors attending events at Melbourne’s major sports and entertainment precincts situated close by,” concluded Erkin.

Pullman’s ground floor interior spaces, reception, arrival area, bar and restaurant are all currently being completely transformed. The redevelopment will provide the hotel with a new ground floor identity, by connecting the external streetscape with the internal lobby, restaurant and bar with a radically redesigned series of interconnected spaces, positioning the hotel design in line with the Pullman Hotels & Resorts global cosmopolitan brand.
