New Twist On The Old Fashioned This Fall At Proof, An American Canteen At Four Seasons Resort Scottsdale
Experience a twist on the Old Fashioned cocktail with the Oaked, Smoked and Spiced cocktail flight available through October 31, 2015, at Proof, an American Canteen, at Four Seasons Resort Scottsdale at Troon North.
The flight is being offered as part of Four Seasons Cocktail Quarterly initiative, a global year-long beverage-focused initiative devoting attention to one cocktail trend, seasonal ingredient or technique, brand-wide, every three months.
Created onsite by cocktail connoisseurs Brian Leeds and Jon Crone, the new flight features Proof’s private label bourbon, barreled for the restaurant by Russell’s Reserve. Stay tuned for the next cocktail theme featuring “bubbly creations,” offered from November 2015 to January 2016.
“Classics cocktails remain popular for a reason – their preparation has stood the test of time,” says Proof Manager Brian Leeds. “The Oaked, Smoked and Spiced flight stays true to the essence of the original cocktail, but showcases trending ingredients and culinary techniques to bring new energy to an American classic.”
Proof patrons can experience the flight at a cost of USD 18, or sample an individual, full-sized drink from the flight for USD 14. On Friday nights, guests can enjoy the flight at a special price of USD 14. From August to October, the restaurant will feature complimentary Old Fashioned flight tastings once a week, showcasing unique techniques and educational elements. On Proof’s cocktail menu, each of the cocktails in the Old Fashioned Flight will feature a “perfect pairing,” taking the guesswork out of a proper pairing. Saturday, one of the three cocktails in the flight will be expertly paired with the dinner special for the evening and offered at a special price.
The Old Fashioned experience will culminate with an Old Fashioned Dinner on October 30, featuring a three-course menu for USD 48 with cocktail pairings, or USD 38 without pairing. Guests can take a step back in time and select from “old fashioned” offerings like Mom used to make – all paired with a different Old Fashioned cocktail. Each guest who enjoys the dinner will receive a take home “make your own Old Fashioned” kit and recipe book.

Proof Manager Brian Leeds stumbled upon his passion for mixology out of necessity when he spent much of this time with various distributors, distillers and brewers during his first few years in the hospitality industry. Learning the complexities of each liquor, his ability to combine ingredients and transform them into a cocktail came naturally.
