M Social Singapore is delighted to announce the appointment of  Louis Tan as Head Chef of Beast & Butterflies, with effect from October 1st, 2018. With an accomplished culinary background that spans 17 years of experience at dining establishments across Australia and Singapore, Chef Louis brings with him a diverse resume of stints at various hotels, resorts and restaurants. He joins M Social Singapore from his prior role as Head Chef at one of the concepts under The Lo & Behold Group.

In his new capacity, Chef Louis will showcase his extensive knowledge of food preparation techniques and recipes amassed from his background in French and European cuisine. His creations are inspired by international influences, which comes through from experimenting with robust ingredients and flavours.

Having helmed positions at Stella Blu (Sydney, Australia), Club Med Resort Lindeman Island (Australia) and OChre (Singapore), Chef Louis was also part of the pre-opening team at Salta Parrilla (first Argentine restaurant in Singapore) and Oasia Hotel (Singapore).

Chef Louis also honed his gastronomic expertise at Dnata Singapore, supplying in-flight meals to passengers across all airline classes for Emirates, Swiss Airlines, Lufthansa, Qatar Airways, Delta Air Lines, British Airways and more.

On his appointment, Chef Louis says, “I am thrilled to be a part of a dynamic and progressive establishment like Beast & Butterflies. I am hoping to bring quality dishes that are ingredientsfocused, which means only using the freshest produce. Beast & Butterflies has created an environment where diners feel at home and I am hoping to bring my personal touch to guest experiences by adding modern twists to conventional dishes.”

Guests can expect welcoming surprises to the soon-to-be refreshed menu at Beast & Butterflies, such as Lemongrass Scented Lobster Bouillabaisse – a very traditional fish stew originating from the port city of Marseille. The French classic will be uplifted by Asian-inspired ingredients such as Lemongrass & Kaffir Lime, creating a taste and fragrance that resembles that of Thai Tom Yum.

Another signature dish that diners can look forward to would be the Five Spice French Duck Breast. Smoked with tea leaves & marinated with Asian Five Spice, this cooked-to-order dish will be paired with Du Puy Lentil that is wonderfully infused with Asian ingredients.

Chef Louis is set to elevate the dining experience at Beast & Butterflies, taking Modern Asian cuisine to a whole new level. With an emphasis on creative menu interpretations and mindfully-sourced ingredients, Chef Louis will play an integral role in helping to redefine and reinvigorate our concept of social and communal dining.
