Nicholini’s Presents “Everything About Abruzzo”

image004Nicholini’s will be hosting Michelin-starred Chef Giuseppe Tinari for a five-day culinary showcase presenting the authentic tastes of Central Italy, Abruzzo region. Partnering up with restaurant’s specialty chef Luca de Berardinis, the duo will concoct a four-, five- and six-course tasting menus available from 1 to 5 November 2016.

Chef Giuseppe’s parents owned an Italian restaurant, Villa Maiella and cooking was in his blood. He apprenticed in a culinary school at age 13 and quickly began his career in the prestigious hotel, Hotel Cipriani in Venice where he had further sharpened his cooking skill.  In 1984, he and his wife returned to his home town Abruzzo to manage the Villa Maiella and the restaurant was awarded with one Michelin star in 2010. As a culinary ambassador of Abruzzo, Chef Giuseppe was invited to showcase his talent and feature the variety of Abruzzese cuisine around the world.

The “isolated” region boasts a cuisine distinct within Italy. From the mountainous side to the coastal side, together with the hill towns in between the mountain and sea, Abruzzese cuisine is well known for its variety. As the mountains are loaded with lambs, lamb and mutton dishes are heavily associated with Abruzzese cuisine. Another major specialty of the region is chitarra, the spaghetti from the guitar.

 

The menus designed by the two esteemed chefs will showcase the characteristics of the Abruzzese cuisine and respect for Italian traditions. Signature dishes include Marinated Veal with Coffee, Homemade Spaghetti Chitarra with Poor Man’s Beef Ragu and Crispy lamb with Pecorino Cheese Fondue. Renowned white and red wines were selected by Julien Peros, head sommelier of the Hotel to complement the special menus.

The three menus are priced respectively at HK$980*, HK$1,138* and HK$1,288*. On the last day of the promotion, Chef Giuseppe will share the traditional cooking tips for ravioli; after class, guest can enjoy a four-course set lunch at the restaurant. Cooking class is priced at HK$1,200* and seats are limited.
