Now Open: Hong Kong’s First Meat Bar – MEATS A casual eatery which strips back the fuss

Tender, juicy and satisfying. MEATS is a no reservation, no service charge meat bar with a straightforward menu of sharing-style dishes. Paying homage to all things meat, the menu doesn’t mess around. Meat is skilfully prepared to bring out the best flavours with techniques such as house smoking and slow roasting and grilling over the kitchen’s custom-made Rotisserie and Robata Grill. Located on SoHo’s Staunton Street in a lively setting, MEATS is the go-to spot for a casual and satisfying bite with carnivorous friends.

Brought to Hong Kong by Pirata Group, the team stay true to their promise of giving Hong Kong quality food and exceptional service at honest prices.

Designed by Melbourne’s Samantha Eades, MEATS features eclectic mismatched seating, warm lighting and vintage touches that give the space a welcoming feel. Exposed raw materials are offset with delicate European tiling and hand-painted drawings of wild forest animals on textured walls. Grab a seat at the glass-fronted kitchen to watch the chefs at work as they expertly marinate, grill, roast and carve.

Head Chef Paddy McDermott has a deep understanding of the techniques that go into preparing meat, “working with meat is something I’ve always been interested in. I’m fascinated by the skill that goes into knowing how to use the whole animal, respecting unappreciated cuts of meat to create amazing dishes. The knowledge and science behind it almost takes us back to our primal instincts,” Says Chef Paddy.

The one-page menu is straight to the point and divided into Small, Meats, Sides, Veggies and Sweet dishes. Diners can tuck in with tongs, miniature meat cleavers and carving forks provided on each table. Small dishes include Chef Paddy’s Ox Tongue (HKD75), marinated for 12 hours in soy, lemongrass and ginger for soft tenderness and distinct rich flavour. The smooth Chicken Liver Pate (HKD140) plays with texture and acidity with Pedro Ximenez spheres and roasted, bitter cocoa nibs.

Meats dishes that can be seen turning on the kitchen’s impressive rotisserie include the rustic Iberian Porchetta (HKD180) with crispy crackling and aromatic herbs. Another slow-cooked signature is the Rotisserie Chicken (HKD180) which is salted overnight and basted in its own juices for juicy tenderness.  Team the meats with sides including the Ugly Potatoes (HKD55) roasted in rotisserie chicken juice, Iceberg Wedge Salad (HKD75) with house-made ranch dressing and Heritage Carrots (HKD80) topped with za’atar, honey and yogurt. Those who want to try a bite of everything can opt for the ‘Chef Give Me Meats!’ menu at HKD420 per person, which includes exclusive secret dishes not available on the menu.

Sweets include a Caffe Mocha with smooth coffee cremeux and white chocolate cream infused with Tonka beans, and Coconut Lime Pie with crunchy meringue.

The bar showcases a wide selection of bourbons, bourbon-based cocktails, craft beers by the bottle and draught and an affordable wine list.

Open Tuesday to Sunday (Mondays opening soon) for dinner, MEATS seats up to 78 people in cosy corners and at casual counters. Weekend brunch begins in November.
