Set to become Singapore’s definitive lobby bar destination, One-Ninety Bar at Four Seasons Hotel Singapore has embarked on a journey to provide discerning diners a luxury bar experience with a difference.

Heralding a new era for One-Ninety Bar under the creative guidance of new partner Proof & Co, new bar offerings create a seamless flow of events for guests throughout the day, from morning coffee to afternoon tea, l’aperitivo and the nightcap. Every element plays a crucial role in the time flow of the bar; l’aperitivo for example, the bridge between day and night.  These key concepts are the main pillars that position One-Ninety Bar as an established front runner on Singapore’s hotel bar circuit.

 

Helming the evolution of the bar is newly appointed award-winning Head Bartender Joseph Haywood. Fresh from the US, Joseph is ready to take on the fast-paced lifestyle of Singapore’s multi-cultural society and burgeoning bar scene. Joe will oversee all bar operations, cocktail programs and events revolving around the vibrant lobby bar, which boasts an elegant ambience and a resort-style outdoor terraza.

Known for customising cocktails to clients’ tastes, for Joseph the priority is ensuring each individual that enters the bar has the best encounter possible. “You can have the most premier product, but it needs to be supported by unique experiences for clients – that is what we are really offering with our new l’aperitivo and afternoon tea. We are launching new coffee techniques that are not commonly used for a high tea, and specialty cocktails that cater to our clients tastes for l’aperitivo,” says Haywood.

Named after its prestigious address on Orchard Boulevard, One-Ninety Bar exudes a sophisticated ambience framed by warm lighting, a full-length wall feature with mirror-like discs and a mirrored bookshelf, a long marble bar takes centre stage in the interior. Behind it are shelves lined with liquor bottles. The outdoor terraza is where guests may choose to immerse themselves in a resort-like setting amid lush foliage.

One-Ninety Bar Launches Afternoon Coffee

One-Ninety Bar has launched an afternoon tea with a twist. Showcasing techniques that are unique to elegant afternoon sessions, the bar will champion new cold brew and hot brew methods.

Guests will enjoy the fresh aroma of the specially selected sustainably sourced 100 percent Arabic beans from Tanzania as the coffee is brewed before their eyes.

  • Hot Brew Coffee: The ritual of the pour engages the diner in a soothing meditative dance, as the first flow of water allows the coffee to bloom, the second in a rhythmic clockwise motion from the centre of the coffee grounds teases out the flavour of the beans, and the final pour seals in the soft and subtle flavour. Preparing the coffee in this manner reduces the acidity, creating a smooth and soothing experience, ideal for unwinding on the weekend.
  • Cold Brew Coffee: Perfect for relaxing on a sunny afternoon out on the bar’s terraza, this cold brew coffee is patiently prepared over the course of eight hours. The process begins with three litres of ice being poured into the top tier of a specialty Japanese brewing tower. As the ice melts, it slowly drips and enters into the next stage of its evolution in the grounds chamber, merging with crushed coffee beans. Each drop then travels through a glass spiral, further aerating to capture the full flavour of the beans.
  • Fresh Selection: Moving away from traditional afternoon tea three tiered presentation format, sumptuous cakes and pastries will be elegantly plated on a sleek glass sheet. Embodying the concept of fresh fare, not only will the coffees be brewed on site, new signature offerings will be prepared live by Pastry Chef Audrey Yee, a Four Seasons veteran and graduate of the renowned Le Cordon Bleu School in London. Chocolate pot de crème with candied violets, black current scones with clotted cream and rose petal preserve, zucchini puff with jamon iberico, and assorted open face sandwiches are just a few highlights of the menu. For those who prefer tea, a selection of TWG teas will be available.
  • The afternoon tea will be available on Saturday and Sunday from 2:00 to 5:00 pm and is priced at SGD 46 per person.

One-Ninety Bar Brings l’Aperitivo Style to Orchard

One-Ninety Bar has launched a sophisticated take on an Italian pre-dinner drink tradition with l’Aperitivo Hour. L’aperitivo, as with its French cousin aperitif, originates from the Latin verb aperire, which means “to open” or “uncover.” The concept behind l’aperitivo is that a specialty handmade cocktail will “open” or stimulate the appetite before the evening meal.

One-Ninety Bar has developed five specialty cocktails that will be linked to the new weekday event: Negroni, Aperol Spritz, French 75, Sherry Cobbler and Bamboo. Each cocktail will be prepared with the world’s finest artisanal spirits.

Coupled with the cocktails will be an assortment of cold cuts, cheeses, delectable dips and nibbles that guests can enjoy. The fresh selection will be available to all guests at the bar who have ordered any alcoholic beverage or mocktail.

The new bar selections have been carefully curated under the watchful eye of Giovanni Speciale, the Hotel’s Director of Culinary Operations and Food & Beverage. “One-Ninety Bar is a unique venue, with both a stylish interior lounge and resort-like terraza. It is an ideal venue to bring good friends, good food and specialty cocktails together – this is really at the core of what l’aperitivo is all about – Llaperitivo e’il momento piu’ emozionante della giornata per brindare con gli amici,” says Speciale, meaning “l’aperitivo is the most exciting time of the day to toast with friends.”

  • L’Aperitivo Hour is available from 5:00 to 7:30 pm, Monday to Friday.
