Opus Bar & Grill Introduces Bourbon Whiskey Aged U.S. Tomahawk Steak at Hilton Singapore

Get ready to fire up those carnivorous appetites this October at Opus Bar & Grill with the introduction of bourbon whiskey-aged 1 to 1.2 kg U.S. California Tomahawk steak. The United States Department of Agriculture (USDA) Certified and 365-day grain-fed Tomahawk steak is wrapped in a bourbon whiskey-soaked cloth and dry-aged in a custom-made Himalayan salt tile cabinet for up to 21 days. The liquor amplifies the dry-aging process, increasing the meat’s flavor and tenderizing it along the way, while absorbing the subtle bourbon whiskey notes of vanilla and wood. This new cut, which serves two, is priced at $128.

At Opus Bar & Grill, steaks are masterfully grilled over an open-flame charcoal grill, creating a highly sought after smoky flavor. In addition to the new Tomahawk steak, diners can look forward to other high-quality prime cuts from Australia and the U.S., with pricing beginning at $58. One main highlight of the menu is the signature sharing cut of 800g Rangers Valley Angus OP rib, which is dry-aged in-house for 14 to 36 days as well as the 1 to 1.2kg Black Angus Porterhouse and prime grade cuts from U.S. Greater Omaha.

Opus’ charcoal-grilled prime cuts include:

  • NEW: 1 to 1.2kg U.S. California Tomahawk whiskey-aged, 365 days grain-fed
  • Signature 800g Australian Rangers Valley Angus OP rib dry-aged, marble score 4
  • 1 to 1.2kg Black Angus Porterhouse, marble score 3
  • 220g Kobe-cuisine Australian Wagyu rib-eye, marble score 6
  • 250g Grainge Angus rib-eye or 220g tenderloin, 150 days grain-fed
  • 220g Greater Omaha sirloin, rib-eye or tenderloin, 100 days corn-fed

The bar & grill is also known for standout dishes that focus on simple cooking techniques partnered with the purity of charcoal grilling.

Other standout dishes from the Opus menu include:

  • Roasted Sakura chicken (perfect for two people sharing)
  • 300g Australian rack of lamb
  • 300g DeRaza Iberico pork
  • Wild sea bass served with clams, black mussels, artichokes and vine tomatoes
  • Signature charcoal grilled banana with smoked salted caramel, coconut and calamansi ice-cream

For the wine connoisseurs, don’t miss out on the on-going “Steak and Wine” package. With any order of Opus prime cuts from $58 onwards, enjoy either a two-hour free flow of selected white and red wines from Sunday to Thursday or 50 percent off on wine by the bottle on Friday and Saturday.
