You know you have a VIP dining room pass when you are accompanied by the general manager and executive chef of the resort you are staying in.  We met at the fine dining room of the Outrigger Fiji Beach resort.  High on our agenda was a re-creating of the resort’s popular signature dishes and some of executive chef Shailesh Naidu’s recommended dishes.

The dinner followed ‘Signature Experiences’, a cocktail and canapes reception at the sky high Kalokalo Bar overlooking the resort and the Pacific Ocean.  This turned out to be one of the largest gatherings the resort has hosted for a general manager’s cocktail party, a milestone for Peter Hopgood who has reigned supreme for eight years.


Our waiter ‘Moses’ has a tray of ingredients to create our first dish, an authentic Caesar Salad. He went to work like an artist, brushing, scraping, mixing and measuring.  The final delivery was no less than a flavoursome masterpiece. We also shared Ko Ko Da, created from succulent marinated fish, tomato, onion, chillies, lime and coconut milk. For mains, a signature dish of chilli and lime lobster washed down with chilled Shaw and Smith Sauvignon Blanc wine. Highlights of the Outriggers Signature Experience include a rendition of the traditional welcome song “Bula Malae” plus Sulu’s and the traditional home-made clay beads on arrival.
