Overall Champion Of Inaugural TrackChef Culinary Competition 2015

The Marina Mandarin culinary team achieved Overall Champion at the Singapore GP’s inaugural TrackChef Culinary Competition held on 11 May. Judged by award-winning chefs Otto Weibel, Eric Teo and Martin Woo, the Marina Mandarin culinary team clinched 4 out of 9 awards presented, consisting of the Best 3-Day Race Menu, Best Main Action Station award, and Best Main Buffet award. This is the 5th year in a row that the hotel has been awarded the F1 catering and the 3rd year to be catering for the prestigious Singapore Suite.

The team’s winning dishes were Chicken Coq Au Vin for the Best Main Buffet award and Vietnamese Beef Noodle Soup with Sliced Angus Beef Carpaccio and Sweet Basil for the Best Main Action Station award. Innovative dishes such as the Fruity Duck Foie Gras with Port Wine Gelée, Baked Salmon with Lemon Miso Soyu Glazed and Tarragon Crusted, Confit Fennel and Lemon Beurre Blanc, and Roasted Beef Medallions with Mild Green Curry Coconut Gravy and “Le Puy” Green Lentils clinched the Best 3-Day Race Menu Award.

Representing the Marina Mandarin culinary team under the consultation of the hotel’s Executive Chef Tony Khoo are chefs Eric Seow, Aubrey Owyong Ke Jun, Sim Kang Hai, and Lester Lai Chee Duan.

The Singapore GP’s inaugural culinary competition had the participation of 24 chefs from six five-star hotels that are officially catering for the F1 Grand Prix, and 12 apprentices from At-Sunrice GlobalChef Academy to decide the hospitality menu for the 2015 Formula 1 Singapore Airlines Singapore Grand Prix. The chefs and budding pastry chefs were divided into three teams to create the winning menu. Team 1 consisted of members from the Grand Hyatt and Sheraton Towers. Team 2’s members consisted of chefs from InterContinental and Marina Mandarin, while Team 3’s chefs were from Pan Pacific and Mandarin Oriental.

Merits were given for innovative dishes based on Menu Design, Appetiser, Main Course and Dessert categories. Creativity of dishes, blend of flavours, ingredients as well as quality of dishes were also judged. Patrons opting for the hospitality and executive packages at the Sky Suite, Club Suite and The Green Room at the upcoming 2015 Singapore Grand Prix Formula 1 Race can look forward to savour the award winning menu on top of a revving display of the night race.
