Michael Canton hosts wine lovers feast on Saturday 25th March 2017

Michael Canton a self confessed lover of Bordeaux and Single Barrel Bourbon has tapped into his extensive wine expertise to craft a unique and special night of food and wine at Pan Pacific Perth alongside Head Chef Paul Gaspa.

Having travelled the world visiting vineyards and wineries, conversing with wine makers from Albuquerque, New Mexico to Hochheim, Germany, Michael has a rare insight into global wine scene. He lived in New York for 6 years around the time of the briefly popular White Merlot emergence and in addition to numerous certifications, including certification as a Sommelier from the Court of Master Sommeliers his credits include working in Food & Beverage for the prestigious Garden City Hotel on Long Island and the historic Battle House Hotel which is ranked in the top 500 hotels in the world in Mobile, Alabama. Michael also worked as the exclusive Beverage Facilitator for Etihad Airways for their Business and First class service which included being on the wine selection panel before he returned to Australian in 2014.

Expect to enjoy spanner crab and sweet-corn risotto as well as local poached marron and grilled lamb backstrap at this 5-Course event as well as chosen wines presented by Michael Canton that include John Kosovic Chenin Blanc, Ferngrove Franklin River Cossack Riesling and Woodlands Cabernet Merlot to name a few.

Head Chef Paul Gaspa and Senior Winemaker Tony Ingle from the Angove family in McLaren Vale have designed an indulgent gourmet menu paired with a selection of exquisite wine. The six-course set menu, featuring unique flavours created with fresh Australian local produce envisioned by our Head Chef, Paul Gaspa and Executive Pastry Chef, Laurent Xavier will come alive as Tony Ingle will share his extensive wine knowledge, elaborate on the evening’s wine pairing and share his extensive insights of the wine industry.

Get ready for a gastronomic journey with gourmet delights such as foie gras and artichoke veloute, risotto thermidor and roast duck breast with crispy skin dukkha accompanied by Angove Family Crest Chardonnay, Angove McLaren Warboys McLaren Vale Shiraz and St Agnes Brandy plus more.
