Inner City urban sanctuary, PARKROYAL Darling Harbour, Sydney is delighted to welcome John McFadden to the position of Executive Chef, PARKROYAL Darling Harbour overseeing operations in the awardwinning ABODE Bistro & Bar, the in-house menu, as well as the Club Experience and the heritage named BARKERS Restaurant. Australian born and trained, McFadden has over 35 years in the food industry bringing with him invaluable experience, an unbridled passion for his craft and innovative culinary creations made from locally sourced, sustainable and seasonal produce.

McFadden moved quickly through the ranks with positions at notable restaurants including the Two-Hatted Grand Fine Dining Room at the Windsor Hotel, Hayman Island and Xu Bistro at the Hyatt Regency. He is perhaps best known for his ten years as Group Executive Chef at Trippas White group.

“The landscape around the in-house hotel restaurant has undergone a huge change in the last few years and is now just as top of mind for consumers as the rest of the hospitality scene in Sydney. ABODE is an awardwinning restaurant and I look forward to working with our kitchen team to bring to life the next stage of its culinary evolution. We have big plans ahead but our promise to keep the food honest, authentic, fresh and seasonal remains.
