Pick’n’mix Your Own Fancy Pantsy G&Ts And Other Madly Modernistic Cocktails At Glam On The Shanghai Bund

unnamed (9)Cocktail connoisseurs can savour inspired sipping with detail-oriented concoctions at Glam, the new dining lounge and bar by ‘M’ Restaurant Group at the heart of the Shanghai Bund.

Glam’s experienced mixologists at the vintage bar concoct an extensive selection of madly modernistic and dramatically eclectic cocktails – along with perfectly executed classics, of course. Every element is thoughtfully considered, from the collection of top-quality spirits, to hand-cut and infused ice cubes, plus Glam Manager David’s unique varieties of personally crafted infusions and bitters, including chamomile, cola, fennel and apricot.

“We’ve created complex and compelling infusions using spirits that are darker and richer than the usual vodka base, like spiced rum and whiskey. Glam’s infused alcohols, bitters and syrups are all housemade and designed to match flavours in beguiling new ways,” explains David Wang, Manager of Glam.

Exemplifying the fun and fantastical approach to your favourite cocktails is Glam’s signature Pick’n’Mix Fancy Pantsy G&Ts. “Glam is all about having fun – it’s the adult interpretation of a ‘kid in a candy store’,” adds David. The pick’n’mix G&T concept was the product of four months of research and is inspired by legendary G&Ts at the best bars around the world.

Gin lovers can choose from some of the world’s finest gins, including Monkey 47, G’Vine Floraison and Dodd’s, paired with a choice of artisan tonic waters, such as Thomas Henry and Cherry Blossom tonic. An added option of ‘something special’ includes custom ice cubes infused with cucumber peel or dill flowers, grapefruit and pomelo slices, plus Glam’s housemade chamomile bitters for complexity and fragrance. Et voila – the best G&T you’ve ever tasted!

Other popular cocktails on Glam’s fabulously creative menu include the New Fashioned Old Fashioned, which updates the classic recipe with rosemary-infused bourbon, raisin bitters, sugar and grapefruit zest. As the ice slowly melts, the cocktail unfolds like a single-malt Scotch. Grapefruit zest adds a piquant aroma and the raisin bitters balances sweetness and bitterness.

Glam’s Botanical Garden is a refreshingly floral concoction of London dry gin, St-Germain elderflower, basil, cucumber, chamomile and fennel bitters. Cucumber is an ideal gin pairing and basil adds an additional sharp, clean flavour element. This is combined with the floral sweetness of elderflower, with chamomile and fennel bitters for added complexity.

An enticing collection of Glam Martinis and a long list of Big Boy Spirits are also offered. Wine lovers are well catered for, too. Glam pours the most extensive selection of wines by the glass in Shanghai, with 38 New and Old World wines and Champagnes dispensed from the enomatic machine beside the bar.

Accompanying Glam’s cocktails, wines and spirits is a delicious array of modern gourmet plates created by Hamish Pollitt, Executive Chef of famous sister restaurant M on the Bund next door. Hamish’s menus respect the seasons, highlightinglocal ingredients and introducingsomething new every month. Delights includeSmokedSalmon and Salmon Caviar(RMB 48), Chili Salt-Crusted Bean Curd & Black Beans (RMB 38), and 18-hour Lamb Shoulder Rogan Josh (RMB 128).The playful ‘Folly Trolley’ isstacked with a revolving selection of desserts for a sweet end to a truly Glam evening.
