Plantation Island Resort delights in new Fiji Fusion menu

Plantation Island Resort has introduced a new Fiji fusion menu at their Ol Copra Shed restaurant, as part of their commitment to improve food standard and quality for their guests. 

Launching at the end of July the Vaka Viti or Fiji Fusion menu is the design of new Executive Chef Bret Hanson.  “Fiji is home to a montage of interesting flavours incorporating Indian, Fijian and Chinese heritages. The new Fiji Fusion menu aims to highlight this combination with fresh local produce sourced locally” said Chef Bret.

Jokeliti ni Savusavu (chocolate mousse)

The Fiji Fusion menu blends traditional dishes such as the Kokoda raw fish, with a modern interpretation and flavours for example sample the “Niu Rokete Ura,” Fijian river prawn, shaved coconut, tempura, mango chilli jam and sticky coconut rice.  Try the signature dish of “Salusalu ni waitui va lolo” a seafood curry with prawn, scallop, mussel, white fish, crab, coconut, curry spices, coconut rice and sambals; then round your meal off with a refreshing dessert passionfruit cheesecake, passionfruit ice cream tapioca candy and passionfruit coulis (Keke Cheesecake) or a chocolate mousse, white chocolate shavings, chocolate ganache and crème fraiche (Jokeliti ni Savusavu).

Main dishes are platters designed to be shared amongst the table, called family style in Fijian, great for interaction and sharing especially amongst family groups.  Ol Copra Shed restaurant serves the Fiji Fusion menu daily from 12-2pm for lunch and 6-9pm for dinner.  For a special treat you can also choose the Fiji Fusion menu when dining in the sand, tides and weather permitting.  An additional set up charge of FJ$200 per table applies.
