DoubleTree by Hilton Melbourne – Flinders Street today launched its new restaurant Platform 270, headed up by Head Chef Tony Moss.
Platform 270 offers a diverse menu that incorporates local produce and playful flavours put together with both modern and time-honoured culinary techniques.
“It’s a very “Melbourne” style restaurant,” said Tony Moss, head chef, Platform 270. “I have been inspired by what’s happening outside our door in the city’s laneways and the diverse architecture, industry, and people – it’s been very liberating.”
Named in tribute to its famous neighbour and Flinders Street address, Tony has used Platform 270’s location to inspire the menu. Playing with a variety of flavours and techniques from around the world, old and new, the menu traverses classics like simply-prepared, locally-sourced, flame-grilled steaks along with more adventurous dishes like a parmesan and Dijon mustard Crème Brulee and 57° Aylsbury-cross duck breast with beetroot, panko-crumbed goats curd, orange and herbs.
Tony Moss gained his formal culinary training in 2004, which included an internship at Heston Blumenthal’s The Fat Duck, before returning to work across a number of prestigious restaurants and wineries in his native New Zealand. After a stint in Shanghai, China Tony found himself settling in Melbourne in 2013 where he worked for Hospitality One as executive chef for Meat Market on South Wharf Promenade.

The smart-casual, intimate Platform 270 has been created by renowned designer Michael McCann of Dreamtime Australia Designs. It has an unmistakable semi-industrial urban feel that is enhanced by the hotel’s commitment to use only high quality materials. The interior features leather booths, views of the wood-fired grill and into the open kitchen, wide plank timber floors, a flocked ceiling slab and dramatic back-lit columns housing the restaurant’s wine collection.
Platform 270 is located on the ground floor of DoubleTree by Hilton Melbourne – Flinders Street, which opened in December 2014 and has just completed its multimillion dollar refurbishment.
