Pullman Puts Art On A Plate With Launch Of Tapastry Menus

Pullman, Accor’s 5-star hotel brand, has launched a new, vibrant way to dine with its Tapastry menus combining artistry and gastronomy.

Tapastry_by_Justin_North_Low ResEach Pullman hotel in Australia will offer a selection of Tapastry dishes that showcase regional ingredients in innovative small plates created by Pullman’s Culinary Ambassador Justin North.

Each plate is a small, colourful work of art that comes together to create the perfect experience for all the senses, similar to the beauty of a tapestry. Tapastry will weave together producers from all across Australia in a celebration of the diverse ingredients available throughout the country. The concept has been created to invite guests to pause their busy schedules and discover local cuisine in a new and contemporary way with a spirit of sharing and conviviality.

“Pullman hotels have a strong design philosophy, with the hotels typically displaying contemporary artworks and designer furnishings and fittings, so the extension of this to our culinary offering is the next step in the brand’s continuing evolution.”

Pullman’s Culinary Ambassador Justin North has created a menu of 10 dishes that will use Australia’s best produce available in each region while each of the Pullman hotel’s Executive Chefs have created four additional dishes highlighting the region’s best produce in which each hotel is located.

The beauty of the small tapas style dishes is that you can experience many different regions in the one sitting, often in the one dish giving you an appreciation for the destination and it’s excellent variety of produce,” North said.

Examples of the Tapastry dishes available at Sydney properies Pullman Quay Grand Sydney Harbour, Pullman Sydney Hyde Park and Pullman at Sydney Olympic Park include fried fillets of whiting and Hawkesbury Calamari with chilli salt and lime aïoli ; A selection of Byron Bay Artisan Salumi and pickles ; Roast Northern Rivers Pork Belly slow cooked octopus and miso eggplant; and Earl Grey ice cream, Zokoko Chocolate, salted caramel.

Tapastry by Justin North is available in NSW at Pullman Quay Grand Sydney Harbour, Pullman Sydney Hyde Park, Pullman at Sydney Olympic Park and Pullman Magenta Shores Resort; In Victoria, Tapastry is available at Pullman Melbourne Albert Park ; In Queensland Tapastry is available at  Pullman Brisbane King George Square, Pullman Reef Casino, Pullman Cairns International, Pullman Palm Cove Sea Temple Resort and Spa and Pullman Port Douglas Sea Temple Resort and Spa ; In Western Australia at Pullman Bunker Bay Resort Margaret River and in the Northern Territory at Sails in the Desert, A Member of Pullman Hotels.

With a heritage in the fine art of travel first established in the Americas in the 1800s and then expanding into Europe, the Pullman brand was resurrected in Bangkok in 2007 to meet the needs of today’s busy traveller.
