Executive Chef Daniel Simpson has designed a menu that reflects his passionate focus on fresh produce and flavour with a healthy balance.

The new menu includes dishes such as the ‘Citrus Cured Ocean Trout, Scrambled Eggs, Crème Fraiche, Fennel and Cress Micro Salad’ which is high in protein and Omega-3, as well as ‘Smashed Avocado, Meredith’s Goat Feta, Dukkah, on Toasted Sourdough with a Poached Egg’ providing a good source of dietary fibre and vitamins.

Traditional muesli has gone up a notch, as low fat house-toasted muesli with no added sugar, using freeze-dried mango and lychee instead for sweetness. Roasted nuts and a touch of honey top off this delicious offering for a luscious delight. The selection of artisan sourdough such as soy and linseed bread as well as walnut and fig bread provides guests a real treat.

Chef Daniel says, “I love the fact that the same thought and effort going into a dinner menu is going into the design of a unique breakfast menu these days. We have an awareness of how we need to start the day right and fuel our body with great nutritious ingredients that have an impact on productivity, which is highly important for breakfast business meetings.”
