Quay West Suites Melbourne has appointed experienced chef Phil Foote to the position of Head Chef.
Phil will bring his repertoire of international flavours to the hotel’s popular dining spot, Jarrah Restaurant & Bar, relocating to the Quay West Suites Melbourne from Novotel Queenstown where he has spent the past year learning about local New Zealand flavours and produce.
During his 19 year career, Phil has had the opportunity to train with some of the best chefs in the world, gaining skills in Australian, European, Asian, German and French cuisine.
Phil is also an expert saucier and garde manger, and specialises in banquets and the creation of patisserie goods.
He says, “Having worked across a range of luxury and boutique kitchens, I know that creating special dining experiences is a fine art”.
“I specialise in developing strong links to local growers of fresh local produce so that diners in my kitchen can rest assured that they’ll be sampling the finest cuisine that the region has to offer and that their meal will be complemented by the perfect wine”.
Describing his style as a “modern fusion of flavours that span continents”, Phil is looking forward to returning to Australia where he will be sharing his “intimate knowledge of fine dining and passion for excellence with the hotel’s restaurant staff”.
Phil will lead Quay West Suites Melbourne’s culinary revamp by using the freshest local produce to create an eclectic menu with international flair at Jarrah Restaurant & Bar, which is located next door to Hamer Hall at vibrant Southbank, close to the Yarra River and the Arts Centre.
