Ruffino wine dinner at Shangri-La

egtmedia59On July 26, the Shangri-La Hotel, Tokyo will hold a special gala dinner featuring Ruffino’s exclusive wines at the hotel’s Italian restaurant, Piacere.

Ruffino is a wine producer based in the Tuscany region of Italy, founded in 1877 by Illario and Leopoldo Ruffino to fulfill their dream of making the most well-known and beloved Italian wines in the world. Over the last 60 years, Ruffino has established seven prominent estates in Tuscany.

A selection of six Ruffino wines will be offered, and the restaurant’s head chef, Paolo Pelosi from Tuscany, will prepare sophisticated modern Italian dishes that will be paired with each wine.

One interesting dish will be four kinds of Parmesan cheese of various ages served in forms such as ice cream, foam and creme brulee, paired with the dessert wine Serelle Vin Santo del Chianti.

The gala dinner will start from 6 p.m. and is available at ¥20,000 per person, including tax but subject to a service charge.

New chef at the Mandarin Oriental

The Mandarin Oriental, Tokyo in the Nihonbashi district of the capital has appointed a new head chef, Nicolas Boujema, for its Signature French restaurant on the 37th floor. Boujema has a history of creating traditional French dishes with a distinctive contemporary flair.

Boujema’s career is a result of his continuous passion for studying the culinary secrets of some of the most celebrated restaurants in France, including three-Michelin-star restaurants Le Balzac in Paris and L’Auberge de L’ill in Alsace. In 2011, he was appointed the executive chef of Pierre, Pierre Gagnaire’s two-star restaurant in the Mandarin Oriental, Hong Kong.

His appreciation for the food culture of Japan is highlighted in his menus. He insists on visiting his farmers and producers to ensure his complete understanding of ingredients and that their passion and daily commitment are passed on to the customer.

From his original menu, guests can choose from courses of five, eight or 10 dishes. A vegetarian course will showcase his enthusiasm for Japan’s great variety of high-quality, fresh vegetables.
