Seasonal Specialties at Spanish Taverna Rustico Bringing a Decadent Barbecued Dining Experience

Spanish taverna Rustico brings a taste of Catalan traditions to Hong Kong this January 2018 with a celebration of the prized Spanish Calçots.  Designed and helmed by Catalan-born Executive Chef, Carlos Salvador Asensio, diners will be treated to a stellar barbecued dining experience in chic Barcelona sophistication, featuring the seasonal Calçot.

A Catalan green similar to a leek, Calçots have a rich history in Catalan cuisine. Fabled to have been discovered in the 1800s by a farmer who lovingly covered each plant while it grew with a generous amount of soil so that the edible part of the plant remained white, Calçots have developed a loyal following in Spain, and its harvest has become a celebration of sorts. Each year, from November to April, Calçots are harvested and celebrated in a myriad of festivals, culminating in Valls, where the largest festival is held.

Chef Carlos brings to Hong Kong this traditional and popular vegetable steeped in history to offer diners in the city a feast of cultural relevance.  From 22 January to 28 February 2018, embark on an indulgent culinary overture and delve into the Catalan winter tradition of Calçots indulgence.

To begin the culinary journey, Chef Carlos introduces the famed calçotada, a special calçot dish in which the calçots (HK$118) are packed tightly together and charred, before being veiled in a rich and nutty homemade Romesco sauce. Perfectly complementing this light and savory dish is Roast Artichoke (2 pieces) priced HK$98 and Sautee White Beans with Garlic and Parsley (HK$78). Those who wish to sample a taste of the Balearic sea will enjoy Chef Carlo’s Special Roast Spanish Snails (“Bove”) “a la llauna” (HK$248), a simple but flavourful oven roast snail dish.

Emulate a traditional family meal in Spain with a Spanish Sausage Combo from Catalonia (HK$188). Alternatively, lip-smacking Whole Iberico Pork Ribs (1kg) with Quince Jelly Sauce (Half portion for HK$278; Full portion for HK$488) can be enjoyed intimately amongst friends and family.  Traditionalists will love the slight modern tweak of the Australian Beef Tomahawk(HK$1,088), an on-the-bone rib steak, French-trimmed to delight in presentation as much as in taste.

For game flavours reminiscent of the European countryside, indulge in Chef Carlos’s Grilled Marinated Spanish Quail (HK$138). Succulent and bursting with flavours, this dish is certain to please young and old alike.

Likewise, Chef Carlos’s New Zealand Lamb Chop (HK$258) is a crowd pleaser made for sharing.  Featuring three pieces of juicy lamb shanks, this is surely a perfect winter dish that calls to mind dining in the hills of Barcelona.

Seaside freshness is also offered to diners through a variety of warming dishes.  Indulge in Fresh Spanish Sardines (HK$128) or enjoy Jumbo Spanish Red Prawns (HK$358 for 170 grams) andFresh Scallops in Shell (HK $128) which highlights Chef Carlos’s love for fresh and exquisite flavours courtesy of the sea.

Chef Carlos’s modern Barcelona cuisine’ is traditional with a contemporary twist, honed at Moments restaurant at the Mandarin Oriental in Barcelona under celebrated multi-Michelin star head chef Carme Ruscalleda.

Rustico is named after its traditional rustic Spanish taverna décor modelled after typical Catalan restaurants – complete with wooden beams, an open kitchen with hanging jambon, pots and pans, and red brick/tile mosaic flooring. In true ‘taverna’ style, the intimate venue even incorporates semi-outdoor al fresco seating under grapevines.

Occupying 2,000 sq ft and 80 seatings, Rustico serves authentic Spanish tapas in a relaxed and elegant setting that is distinctly modern with covert Spanish accents.  The open kitchen invites diners to interact with the kitchen and observe Chef Carlos Salvador Asensio’s culinary skills.
