Shangri-La Hotel, Beijing introduces AZUR by Michelin-starred Chef Mauro Colagreco, an original fine-dining restaurant, featuring the best of authentic and creative French Riviera cuisine. Azur originates the colour of lapis lazuli, a precious stone that could have been a morsel carved out of the Riviera’s sky or the ocean waves, comforting the mind and soul with peaceful balance. The restaurant’s Chinese name “聚”derives from Chef Mauro Colagreco concept: “a meal is an event in which you share your life, your smile and your food.”

The chef chooses to magnify his cuisine through essences and flavours of the south of France to graceful yet genuine dishes without frontiers, embracing land and sea, herbs and flowers, bitter and acid tastes. For instance, guests will explore flavours of citrus, purple cauliflowers, scallop and radish flowers with aged balsamic vinegar. His dishes revived the simple enjoyments of friendship and the spirit of “Cote d’ Azur” festive dining gathering by the seaside.
