Shangri-La Hotel, Fuzhou welcomes Sham Yun Ming as its new Chinese executive chef. Chef Sham has a wealth of experience spanning more that 38 years spent working at many five-star hotels and high-end restaurants in different parts of the world, adapting and developing his skills and mastering his cuisine. Now, he joins Shangri-La Hotel, Fuzhou to take the guests’ dining experience to new heights with an exciting range of outstanding dishes.
Chef Sham started his culinary journey at the age of 12, working alongside his father in his hometown, Hong Kong. Seeing his father’s passion and dedication, Chef Sham knew then he wanted to become a chef. He became an executive chef when he was only 19 years old at a well-known restaurant in Hong Kong. Afterwards, he won the Golden Awards for Chinese Cuisine Practical Class at Hong Kong Food Festival in 1989.
Thereafter, Chef Sham developed his cooking techniques to international level by working at different countries around the world, including Singapore, the Philippines, Japan, Australia, Indonesia and Thailand. He has rich working experience in Cantonese cuisine gained at different establishments, including Noble House, Brunei La Taverna Restaurant and so on.
In addition, Chef Sham has maintained a strong relationship with Shangri-La Hotels and Resorts. In 1992, he joined the big Shangri-La family and has worked as Chinese executive chef at various properties, including Shangri-La Hotel, Manila; Pudong Shangri-La, East Shanghai; Shangri-La Hotel, Beijing; and Shangri-La Hotel, Bangkok. He will now bring more delicacies to Shangri-La Hotel, Fuzhou.
Without a doubt, as a Hong Kong-born chef, Chef Sham is a veteran of both traditional Cantonese and fusion cuisines. His passion and curiosity give him the opportunity to learn and drive him to produce better, original culinary creations. He also creatively incorporates his originality and talent into his dishes and ensures all dishes exude perfection on every plate before they are served to guests.
“As a professional chef, I am always rigorous regarding food quality, ingredients and taste, and passion for food and the ability to be innovative are also key factors to become successful,” Chef Sham said about his cooking philosophy.
