As part of Gusto Italiano 2016, The Waterfall presents a four-day culinary event with Master Chef Igles Corelli of one-Michelin star Ristorante Atman in Lamporecchio, Tuscany. From 29 September to 1 October 2016, savour an exquisite four-course lunch or six-course dinner tasting menu of traditional Italian cuisine presented with Chef Igles’ signature innovative flair.
A stalwart in Italy’s dining scene, Chef Igles cooking style is best described asGaribaldina Cuisine in which he sources for the freshest and highest quality produce from all over Italy and ensures ingredients and dishes from every region are showcased in his menus. Chef Igles combines this credo with a ‘Circolare’ (circular) approach in which he harnesses the full potential of each ingredient by separating them into different components and preparing each part in a style that best showcases the ingredient.
This approach, together with Chef Igles’ 30 years of experience in the culinary industry, can be experienced in his tasting menus at The Waterfall with highlights that includeRock Garden – Vegetable Spheres with a Crispy Potato Coating, Giardinera and Liquid Lettuce; Parma’s Mojito – a Lime and Mint Risotto with Parmesan Ice-cream and Parmesan Air; Tamerice 2001 – King Red Prawns with Marinated Fruit and Vegetables, Samphire and Thyme Oil; Beef as Tuna – Beef Tenderloin in Soy Sauce and Honey; and to conclude, Chef Igles’ signature Trigabolo 1986 – Fried and Caramelised Cream Puffs with Citrus Sauce.
The four-course lunch menu is priced at $78++ and is available from 29 September to 1 October 2016. The six-course dinner menu is priced at $118++ and is available from 30 September to 1 October 2016. For one evening only on 29 September, the six-course dinner menu will be further enhanced with a pairing from the exquisite wines of Maculan from Italy’s Veneto region, and priced at $168++.
