Two colleagues from Shangri-La Hotel, Surabaya, took home the first prize at the Dilmah Real High Tea Challenge Indonesia 2015, which was held in Jakarta from 25-26 March 2015.
Our culinary team, which included Arie Yulianto (bartender) and Juli Hariyani (sous chef), won the first-ever Indonesia Dilmah Real High Tea Challenge with six excellent tea-inspired dishes. Shangri-La Hotel, Surabaya’s team competed against teams from 22 other international brand hotels from Jakarta, Surabaya, Bandung and Bali.
The panel of judges consisted of Bernd Uber, one of the most respected World Association of Chefs Societies (WACS) judges, Dilhan C. Fernando, a representative from Dilmah Tea, and Indonesian Chef Vindex Tengker, a WACS certified judge and former president of the country’s Association of Culinary Professionals.
The team from Shangri-La Hotel, Surabaya, was recognised for their bold interpretation, technical expertise and team cohesion. The winning High Tea menu was comprised of tea pairing menus that featured Uda Watte Single Region, Jasmin Dragon, Lady Rose and Sipping Illusion and two tea-inspired dishes – Pan Seared Scallops in Ceylon Spice Chai Tea and Chamomile and White Chocolate Mousse. The team successfully showed the judges very elegant innovations, excellent interpretations and new ways of enjoying High Tea in the modern era.
Arie Yulianto and Juli Hariyani of the winning team will proceed to the global stage to represent Indonesia at the Dilmah Real High Tea challenge in Sri Lanka in July 2015.
