Sireeampan Boutique Resort & Spa, the intimate 11-suite luxury resort located in the heart of Chiang Mai, welcomes the changing season with a luxurious winter menu. 

Inspired by the plethora of seasonal ingredients of the surrounding markets and on-property gardens, the menu boasts unique vegetables, fruits, poultry and fish that may not normally be associated with the copping temperatures of winter.

“Just recently, it has become evident that the seasons are changing in Chiang Mai – the days are slowly creeping shorter and dusk is upon us earlier,” said Executive Chef Scott Flaxman.  “This is an exciting time for me as a chef.  Beyond the staple winter root vegetables and dark greens, I am able to dabble with juicy strawberries, slightly tart raspberries, migrating rainbow trout, and an unlimited amount of exotic mushrooms.  It is my passion and my pleasure to treat these fresh ingredients with integrity, while providing guests a dining experience their taste buds will never forget.”

Priced at B3,250++/per couple, Sireeampan’s winter set menu is as follows:

Cocktail and canapés on arrival.

Trout

Smoked Chiang Mai trout, cucumber linguini, fresh mint pesto. 

Guinea Fowl

Rillettes of Guinea fowl, warm roast onion bread.

Amuse bouche

Beetroot

Classic Russian Borsch, roasted beetroot, herb sour cream.

Pheasant

Saltimbocca of pheasant, celeriac mash, wilted Swiss chard, cherry liqueur jus.

LN2

74% chocolate ganache, fresh Royal Project berries, liquid nitrogen raspberry dust.

Coffee

A selection of handmade truffles.

In addition to an unforgettable dining experience, Sireeampan is offering affordable room rates for the winter escape this year.  Rates begin at THB8,800++ per suite per night (20% savings from the regular leisure rates) and are available for any direct booking before 30 November 2014.
