Soft + Sweet: The Ultimate Eclairs At Quick Stop Patisserie

Quick Stop, the ever-indulgent French-Thai patisserie at Plaza Athénée Bangkok, a Royal Méridien, has launched a new signature item among its comprehensive pastry selections: the classic French éclair.

Quick Stop - Signature dishThe hotel’s talented British Executive Pastry Chef, Daniel Back, thoroughly revised his formal studies of the definitively French dish to ensure absolute authenticity and also avoid the pitfalls that can easily spoil what is a deceptively difficult pastry to perfect.

A true French éclair is cylindrical in shape and should be 5” long by 1.5” wide  (13cm x 4cm). They are comprised of choux pastry with a filling of crème patisserie, whipped cream or chiboust cream, and a fondant icing or caramel topping. The dough is piped into an oblong shape with a pastry bag and baked until it is crisp and hollow inside.

Quick Stop’s expert pastry chefs mix a range of pastry creams for the toppings and fillings, three of which are collected as signature items: Chocolate and Coffee, both very classic, and Lemongrass Cream, a Thai-inspired innovation that you will probably agree after tasting qualifies as an instant classic. Other flavours you may encounter include raspberry, mango and coconut as well as Thai tea, white chocolate and blackcurrant.

Essential to the outcome is use of only the finest ingredients and sensitive treatment throughout, in this case ranging from Trablet chocolate and freshly ground coffee beans to natural lemongrass essence. The critical moment comes in the baking. If you remove the dough from the oven too quickly, it disintegrates into a soggy mass. If you leave it in too long, it dries to a crisp. But if, as Daniel does, you whisk it out of the hot oven and immediately slide it into an adjacent cooler oven, the ideal dough consistency that is soft and chewy but holds its shape should result.

Besides being available to enjoy at Quick Stop or take away, the éclairs can also comprise a special  interactive feature at meetings and banquets as well as being offered on The Rain Tree Café breakfast and lunch buffets and with in-room dining.
