Sushi by Nadaman, helmed by the newly on-board Chef Sato Shigeru, presents a sushi dinner and sushi brunch, by showcasing different types of sushi with authentic Japanese style to introduce the sushi culture to the locals.
A veteran in sushi making, Chef Sato Shigeru brings with him 22 years work experience. Before he came to Shanghai, he held the position of sushi chef at Nadaman restaurant in Yokohama. He learned how to make sushi in 1993 and has worked at many sushi restaurants in Tokyo since then. He also worked at Shangri-La Hotel, Tokyo for three years since the hotel opened.
Chef Sato has the courage to break through old traditions and thus create innovative dishes that not only preserve the essence of authentic Japanese sushi cuisine, but also introduce creative ideas and concepts into cooking and garnishing.
The Sushi Dinner Menu consists of six exquisite courses aimed to invite diners to embark on a rich and complete journey into the Japanese world of sushi. It starts with three fine appetisers presented in stylish small plates followed by Sliced Beef, Lettuce and Cucumber rolled in Rice Paper.
Seafood lovers may find the third course a true delight – Abalone, Scallop and Octopus served in delicate pieces, which give diners “light and refreshing” with Japanese plum paste. It is followed by a grilled dish of Grilled Tuna Belly with Miso.
The Sushi Dinner Menu highlights a unique steamed sushi that Chef Sato specially created, namely, Salmon, Yellowtail, Sea Eel, Shrimp, Sea Urchin and Salmon Roe. A Japanese Sponge Cake and Ice Cream will be served to close the sushi feast.
Apart from the Sushi Dinner Menu, Chef Sato also presents a new weekend family brunch set at Sushi by Nadaman. He describes the menu as “The way I imagine sushi when I was a child”. Guests may taste different types of sushi, such as Tokyo style, Osaka style, Rolls and Mini Sushi. Chef Sato has prepared freshly handmade Pressed Eel Sushi, California Roll Sushi and Grilled Yellowtail and Grilled Tuna Belly Sushi.
Sushi by Nadaman’s Sushi Dinner Menu is priced at RMB500 per person, daily from 6 p.m. to 10 p.m. and the weekend Sushi Brunch is at RMB148 per person, RMB98 for children’s menu, on Saturday and Sunday from 11.30 a.m. to 2.30 p.m. The rates are subject to a 15 per cent service charge.
