Swissôtel Métropole Refreshes Culinary Identity with Gusto Restaurant and Gusto Atelier

Situated on the first floor, Gusto Restaurant offers a modern and stylish Italian cuisine whilst preserving the personal and elegant service of a five star hotel.


On a more informal note, Atelier Gusto, situated on the ground floor, welcomes guests as of midday with a selection of small dishes, fresh & light. Towards the evening, a delicious Italian aperitif is served in a ‘Dolce Vita’ ambiance.

Philippe Pourias, the Executive Chef who arrived at the beginning of the year, finds his inspiration in a transalpine cuisine and redesigns the Italian gastronomy in a modern way to fit any dining need, from a formal business lunch to a romantic dinner for two. Gusto brings guests the authentic flavors and the simplicity of fine quality produce, recipes revisited from an intuitive artist and in respect of the traditions of his Italian kitchen team.

Philippe Pourias brings particular attention to the research and choice of produce. The mainrequirements for him are seasonality and provenance. The menu offer ranges from colored transalpine antipasti to an aromatic ‘porchetta’ style lamb, ‘carpione’ pike perche fillets and a true local Burrata made in Geneva served with ‘pesto rosso’. The Chef’s culinary roots are from the wild Atlantic coast and the Angevin lands but his homemade ravioli filled with pine nuts and broccoli cream, the octopus ‘paccheri’ and the beef ragout ‘pappardelle’ will take you in the warmest of the ‘nonna’s’ kitchens.

The menu offers a selection of fish and meat rigorously selected in Switzerland and France, and the desserts will delight the sweetest of tooth’s. The signature dessert is the ‘Babà’ made with home made jam of local mirabelles.

The richness and the Mediterranean influences are the indispensable ingredients for the conception of a simple and tasty menu and the generosity of the Italian spirit will be brought to guest’s plates by Gusto’s welcoming and friendly service.
