Sydneysiders get a taste for Las Vegas

The ‘Entertainment Capital of the World’ has long been associated with culinary indulgence, but perhaps not for all the right reasons. Over the last few years however, Las Vegas has redefined the destination’s gastronomy and wine experiences, now serving up the most comprehensive collection of celebrity chefs, world-class restaurants and Master Sommeliers in the world. 
For two days Sydneysiders are invited to experience this transformation firsthand, as part of a new collaboration between the Las Vegas Convention and Visitors Authority (LVCVA); Executive Chef Roy Ellamar of Harvest by Roy Ellamar at Bellagio Resort & Casino; and My Kitchen Rules (MKR) semi-finalist and cookbook author, Jordan Bruno.

Chef Roy recently hosted Jordan in Las Vegas and together they retraced the “farm to table” process. The duo then created a bespoke Las Vegas and Australian inspired dish that tells the story of the Las Vegas culinary culture transformation, but also appeals to Aussie tastebuds. 

Jordan has now returned to Sydney with Chef Roy, where they will offer Sydney foodies the chance to sample and savour their creations, and experience the new and improved Las Vegas gastronomy experience firsthand, via a Las Vegas food truck.

Chef Roy said he was very excited to bring his culinary style to Australia and share it with Aussies.

“I grew up in Hawaii where farming and fishing were part of my daily life so the ‘farm to table’ concept and using fresh seasonal produce is rooted in my cooking philosophy today,” said Chef Roy.

“It’s very important to build relationships with the people that grow our food because it ensures that the cuisine we present to our guests is of the best quality.”

“Through my dishes I hope to help change the perception surrounding food in Las Vegas, proving that the destination has become one of the world’s greatest culinary cities. I’m proud to be able to work with our local farmers to source fresh produce and create ingredient-forward dishes that continue to excite guests,” he said.

MKR semi-finalist and author of The Gay Chef cookbook, Jordan Bruno said his visit to Las Vegas was a huge eye opener.

“I always just thought of Las Vegas food as unhealthy buffets and takeaway style food, being the place of over-indulgence, but I was so wrong! I ate at some of the best restaurants I have ever eaten at and experienced new culinary concepts that really changed my perspective of the Las Vegas dining scene,” Jordan said.

LVCVA senior vice president of marketing, Cathy Tull said Las Vegas is the place where luxury and innovation collide and unique collaborations and specialised brand activations are what keep enticing visitors year after year.

“In 2016 Las Vegas welcomed 42.9 million visitors, breaking tourism records. To keep enticing more leisure and business travellers we need to ensure we are on top of our innovation game. Las Vegas continues to deliver fresh and engaging experiences, and this is particularly relevant across the food and beverage industry.

The culinary scene has really changed over recent years and we are now seeing an influx of globally-renowned restaurateurs investing substantially in the destination and creating theatrical dining experiences through food and surrounding environments. It’s a very exciting time,” Ms Tull said.
