With over 30 years of experience in culinary, Chef Sim brings his signature Singaporean dishes that have satisfied diners around the world to Taipei. As an experienced chef, Chef Sim has worked at various five-star hotels, including Shangri-La Hotel, Harbin, where he served as the executive chef. He started his career focusing on European cuisine and putting much emphasis on ingredients and plating.
After years of training, he figured that Asian cuisine would become more popular in the future. Thus, he took advantage of his Singaporean background and started to study Asian dishes. With his experience in making Western cuisine, he redefines the authentic Singaporean cuisine with a special and unique taste.
