The Optimist: Unique New Cocktails to Intrigue the Taste Buds

Hide out from the humidity and get refreshed with a selection of brand new cocktails at The Optimist. With beautiful vintage décor and the alluring charm of old-world Europe, the Barcelona-chic bar is the perfect space to unwind, soak up the atmosphere and sip on a cocktail or two.

Bar Manager Sam Lebel’s new cocktail creations experiment with elements and ingredients for pairings that, when balanced, make for unique flavours and delightful concoctions.

Smooth and silky, the floral Bee’s Knees (HKD110) features Finlandia Vodka-infused chamomile, green Chartreuse, Elderflower Liqueur, lemon juice and vanilla syrup topped off with egg white. Whisky lovers will love the Pear Brûlée (HKD120), mixed with Johnny Walker Black Label, pear liqueur and puree, lemon juice and offset by a dollop of caramel syrup. Ignite the taste buds with the rich mix of flavours of Mount Gay rum-infused raspberry and coffee beans in Spicy Joe’s (HKD120), finished with an intriguing mix of Chambord, chocolate absinthe liqueur and habanero bitters.

Not to miss on the menu is The Optimist’s famous Spanish-style gin and tonics. Served in generous goblets, the bar’s 24 different varieties are topped with fruity and herbal garnishes, chosen to balance and complement each gin blend.

Head over early for The Optimistic Hour, daily from 3pm to 7:30pm, for a selection of cocktails, gin and tonics, wine, beer and bar bites starting from just HKD48.
