The Perfect “Pair” Afternoon Tea at Café 103

A much-loved venue for indulgent teatime pursuits, Café 103 at The Ritz-Carlton, Hong Kong never fails to pamper dessert aficionados with its enticing afternoon teas that live up to the hype. Only from March 1 to April 30, 2018, guests are invited to sink their sweet tooth in handcrafted delights brimming with cleverly blended flavors of vanilla and Australian pear.

To bring the finest out of this heavenly combination, Executive Pastry Chef Richard Long uses premium Tahitian Vanilla from the Leeward Islands of French Polynesia. Characterized by the distinctively strong notes of tropical volcanic earth with hints of prunes, liquorice and chocolate thanks to the Polynesian terroirs, this irresistibly aromatic gem has been the pride among the locals since the 1700s. Accompanying the velvety aroma of vanilla are the fresh sweetness and succulent flesh of Williams Bon Chretien pear from Australia, which is right in season until end of May.

With the skillful hands of Chef Richard, guests can look forward to a delectable selection of dainty pastries. Topped with a decadent layer of white chocolate and vanilla cream, Pear & Vanilla Verrine is a symphony of textures featuring pear-and-vanilla-infused cream, almond joconde cake, pear compotes and vanilla jelly artfully layered in a glass. Vanilla, Pear & Muscovado Tart delivers palate-spoiling surprise in one spoon – vanilla and pear compote is unveiled under a generous portion of caramel-glazed musovado cream, all housed in a crunchy chocolate tart shell. With a lingering scent highly resembling vanilla, Tonka beans infused in the ivory pear cream takes the aromatic profile of Pear & Tonka Tart to the next level.

To complement these delicious pastries, Executive Chef Peter Find has also designed four savory treats. Traditional dark rye bread from his home country, Germany, together with refreshing raspberry jam, tones down the richness of foie gras terrine, making Pumpernickel with Foie Gras Terrine and Raspberry Jam a flavorful light bite for mid-day. Enclosing an enticing blend of smoked salmon, sour cream, lemon and vanilla seeds, Swiss Roll with Smoked Salmon Rillettes is sure to whet one’s appetite.
