The Ritz-Carlton, Hong Kong Welcomes Guest Chef Dominique Bouchet from Michelin Two-Star Dominique Bouchet Tokyo

From March 15 to 17, culinary maestro Dominique Bouchet and his team from the Michelin two-star French restaurant, Dominique Bouchet Tokyo, will turn the private dining rooms of The Ritz-Carlton, Hong Kong into an epicurean haven spotlighting his much-acclaimed dishes and new creations exclusive to this promotion.

Hong Kong diners will get to savor Chef Dominique’s famed modern classic French dishes featuring seasonal ingredients from different parts of Japan. Highlights include his signature Parmentier made with Blue Lobster from France, presenting the very best of the all-time favorite French classic. Featuring Japanese white turnip, Kabu, another simple and delicate creation, presents sea urchin from Hokkaido and creamy scallop mousseline in a lobster bisque base. Exquisite Japanese Wagyu with four-pepper sauce (black, green, red and white peppers) showcases the eminence of sauce in French cuisine.

Simplicity, consistency, fresh ingredients and passion make up the philosophy deeply rooted in Chef Dominique’s cooking. His cuisine at Dominique Bouchet Tokyo stays true to French classics while incorporating the best of Japan’s fresh produce. For three days only, Hong Kong gourmands may sample Chef Dominique’s highly coveted creations. At HK$1,988+10% per person, the six-course dinner menu promises to immerse diners in the chef’s culinary world. A glass of champagne is included to pay homage to Chef Dominique’s love of its elegance. A four-course menu is also available for a lunch tasting experience at HK$988+10% per person. Originally from the Cognac area of Charente in France, Chef Dominique set foot into the culinary world at age 14 back home and began his career at 22 in Paris. Having the opportunity to work alongside Joël Robuchon was a turning point in his career, as his talent soon caught the attention of the master chef, who later appointed him as Sous Chef for the opening of the Michelin one-star Concorde La Fayette. Continuing to refine his skills at two-star Jamin and three-star La Tour d’Argent led him to his first encounter with the Japanese market – opening La Tour d’Argent in Japan in 1984. After a seven-year venture, earning a two-star rating for his own hotel restaurant, Le Moulin de Marcouze in his hometown, Chef Dominique took the helm as Executive Chef overseeing all restaurants at Hôtel de Crillon where he attained a two-star rating for Les Ambassadeurs during his seven-year tenure. With 30 years’ experience in the field of gastronomy, Chef Dominique opened his namesake restaurant in Paris in 2004, which quickly garnered one Michelin star. He then extended his culinary influence to Japan with his restaurant in Ginza receiving two Michelin stars just four months after opening in 2013. Two years later, the restaurant was relocated nearby and soon reaped two stars anew, keeping the recognition for three consecutive years. Opened in 2016, the bistrot Les Copains de Dominique Bouchet in Ginza was recently awarded Bib Gourmand status in the 2018 Michelin Guide. Chef Dominique’s latest venture is a steak house in Ishikawa Prefecture named Le Grill Dominique Bouchet Kanazawa, which was opened in October 2017.
