By offering food that is at its nutritional and palatable peak, the cafe is dedicated to providing options to support an integrated way of living that benefits the individual and the community, and has partnered closely with Hong Kong’s local farms to source “clean” fruits and vegetables free of pesticides and chemicals.

Heading the kitchen is Asian American chef and nutritionist Justin Chan, who is a strong believer in the slow food movement. With the café, he is on a mission to prove that healthy meals don’t have to be bland or boring – or strictly vegetarian for that matter. In all his dishes, Justin has foregone butter (a big no-no for cholesterol), opting instead for olive oil, slow cooking and poaching to achieve tender textures that burst with flavor and goodness. One of his favorite techniques is sous-vide, which consists of controlling the temperature of water to under 47 degrees Celsius, so that the active enzymes in the produce remain intact, as does the succulence.

Available for dinner are small bites perfect for sharing, including the exceptionally juicy and tender 48 Hour Short Ribs, carefully slow cooked for two whole days until perfection, the Poached egg with the options of truffle bacon crouton or house chill smoked salmon crouton, and the delicious Prawn and Crab.

Rotating daily lunch sets feature an appetizer and a wrap, like the Loco’s Kalbi – Korean-style grain fed short ribs stewed in barbeque and spicy ssamjang sauce wrapped in tortillas and served with seasonal grilled vegetables, and the vegetarian Spicy Spinach quesadilla. Request corn tortillas for a gluten-free and high fibre option.

For those who really do want something green and leafy, the Sesame Tofu Salad comes as a generous portion of fresh mesclun leaves, tomatoes, carrots, kimchi vinaigrette, and sesame soy marinated tofu, or try the Mixed Quinoa Ensalada.

“I just like to create food that takes people on a journey with me, food for the soul,” Justin says simply of his eclectic culinary style. “It is inevitably influenced by my background as an Asian with Laotian, Chinese, and Portuguese ancestry, growing up in Milwaukee. A lot of cross-cultural flavours are in there, inspired by a combination of various regional cuisines with new ideas.”

You will love the Brazilian Thunder, a blend of pressed juices from organic, locally grown green veggies, cinnamon, ginger, lemon, and ultra-hydrating coconut water. The Miracle Berry juice, containing coconut water with goji berry and red date, combines superfoods for a supercharged drink.
