Sicily’s Therasia Resort Sea & Spa, a 5-star establishment already home to one-Michelin star restaurant “Il Cappero”, has announced that it will open a dedicated vegetarian restaurant on 1 June.

Pierpaolo Tiretti, General Manager at Therasia Resort Sea & Spa said, “Our decision to open a dedicated vegetarian restaurant was based on evidence indicating a rise in vegetarians within Italy. The Italy Report by Eurispes for 2018 found that 6.7% of Italians are now vegetarian, an increase of 1.6% since 2017. A phenomenon we feel is not just limited to Italy.”

Whilst Therasia’s Executive Chef Guiseppe Biuso will oversee the new project, former chef de partie at Heston Blumenthal’s Melbourne-based Dinner, Andrea Vicario has been appointed as Head Chef. Having recently relocated back to his homeland of Italy from Australia, Vicario’s latest venture aims to work with Biuso to recreate a taste of the Aeolian Islands located off the coast of Sicily.

The set tasting menu will use local ingredients most of which sourced from the resort’s onsite garden including home-grown Sicilian specialities tomato, eggplant and capers.

The opening of the new vegetarian restaurant next month follows the reopening of the five-star resort located on Volcano Island off the coast of Sicily for the European summer season in April.

Signature dishes on the menu include Mare (sea) a dish that evokes a taste of the Vulcano sea. This dish features puffed black potatoes representing the Vulcano soil along with avocado purée and parsley powder to symbolize the Vulcano vegetation and samphire for a salty taste of the sea.

Another signature dish is Tartare di Pomodoro, a reimagining of the distinctive “pane cunzato” for which the Aeolian island is famous. Made using only tomatoes from Vulcano Island, most of which are directly from the resort’s vegetable garden, this dish is made up of tomato tartare, confit tomato cream and sun-dried tomato cream topped with croutons seasoned with caper powder, tomato powder and oregano.
