The world’s largest luxury hotel brand, InterContinental Hotels & Resorts, has today announced the launch of Haut Patisserie: a limited-edition, art-inspired high tea available across all InterContinental Hotels & Resorts in Australia and New Zealand. The high tea is a creative extension of the brand’s partnership with contemporary artist Alexander Hall, also known under the alias as Haut de Gamme, who created a stunning, one-of-a-kind art installation to celebrate 200 InterContinental Hotels & Resorts across the globe.

Alexander recently visited Australia to officially unveil Haut Patisserie in collaboration with InterContinental’s inspired culinary talent. During his Sydney visit, 15 exquisite pieces of the 200 InterContinental Hotels and Resorts art installation were specially flown into Double Bay, including unique pieces created for Australia, Fiji, New Zealand and Japan.

The original and full installation is made from 200 champagne bottles, individually hand-painted by Alexander Hall in his bright, energetic drip-style. The creative collaboration was designed to commemorate the milestone of reaching 200 InterContinental Hotels and Resorts around the globe, with each bottle uniquely and especially-designed, inspired by each of the InterContinental brand’s 200 hotels.

The artworks by Alexander Hall will be displayed for a limited time in Stillery Bar & Dining at InterContinental Sydney Double Bay until 31 May. The Australian bottles offer a unique glimpse into Hall’s interpretation of Australia, with pops of bright colour, patterns and hand-painted Sydney icons to showcase our iconic lifestyle. A special Hayman Island bottle was also crafted with aqua hues and bold strokes of golden yellows to signify the coast.

Alexander Hall said: “Champagne for me means happiness, joy, celebration and the idea of bringing people together. When I decided to paint on champagne bottles to celebrate the 200 InterContinental hotels, I wanted the bottles to reflect each InterContinental hotel’s unique personality, design and location.

Collaborating on Haut Patisserie felt like a natural extension to fuse art and food together with the tradition of high tea. Australia is full of rich flavours and texture, both in dining and nature, and it’s been an honour to help bring this to life with another unique experience for guests.”

The limited-edition high tea, aptly named Haut Patisserie, is a remarkable blend of art and patisserie, crafted by InterContinental Hotel’s extraordinary culinary team of pastry chefs. Guests will indulge in edible art with specially-crafted macarons infused with Champagne jelly in a rich buttercream and embellished with Haut de Gamme’s signature artistry. Guests will also indulge in a glass of Champagne to enhance the high tea, included with compliments.

Haut Patisserie is available at each InterContinental Hotel & Resort across Australia and New Zealand, including InterContinental Sydney, InterContinental Melbourne the Rialto, InterContinental Sanctuary Cove Resort, InterContinental Adelaide, InterContinental Sydney Double Bay, InterContinental Perth City Centre and InterContinental Wellington.

The limited-edition high tea is available from 1 May to 31 May 2019.
