Cool off this summer with bold, colourful and refreshing dishes at TokyoLima. Executive Chef Arturo Melendez presents a selection of ten new dishes designed to melt the summer heat away. The Of The Skies collection takes inspiration from beautiful summer days and will be available until the end of the season. Along with the new dishes, the extensive cocktail menu at the buzzing izakaya are hand crafted to pair perfectly with the Nikkei inspired dishes.

Small Plates for the summer season include the Salad for Summer (HKD90)full of texture with bright orange highlights from the delicate carrot noodles, kiuri, thinly sliced daikon and grated ginger tossed with a house made peanut dressing stirred up with a drizzle of sherry vinegar. The Raw and Seared selection features newcomer H&M #2 (HKD130)an evolution of TokyoLima’s signature H&M. Colourful and fresh, the dish features green tiger’s milk topped with fresh seaweed and shoyu pearls. Newest addition to the Sushi & Co. section is the Salmon Maki (HKD130)featuring smoked salmon wrapped around smoky rocoto cream cheese served with a side of sweet raspberry tiger’s milk, yuzu and chilli pearls. Tiger’s milk is traditionally served with a ceviche however head chef Arturo spices things up with his unique twist on the dish.

Made for sharing, the succulent Beef Short Ribs (HKD280), makes its debut to the Larger section of the menu, slow cooked for 12 hours and served with a smoky house made red miso and panca BBQ sauce plated with purple sweet potato puree. The LL Stick (HKD160) features under Sticks with lamb loin marinated in beer, garlic and ginger then grilled to perfection and served with apple puree and a zesty mint salad. The bright green coriander sauce and deep smoky red pepper puree stand out on the Yasai Stick (HKD100) with grilled Portobello mushrooms and eggplant topped with red beetroot and pickled shitake.

For the grand finale, desserts include the Oye Papi XO (HKD100), a chewy dark chocolate cookie topped with chocolate mousse, chocolate sauce, caramelized almonds topped with a refreshing coconut sorbet and the bright green Dulce Maria (HKD95) featuring a soft matcha cake with a white chocolate ice-cream drizzled with Arturo’s secret pistachio sauce.

With refreshing flavours and inventive combinations, TokyoLima’s new summer collection will cool down even the hottest of days.
